Chicken Salad and Blueberry Honey Cornbread





We've had some cooler temperatures in Texas! 

It's a bee themed tea for today set upon this cute bee tablecloth, and using my adorable bee napkin rings that my dear friend, Pat, gave to me.  I used my beehive cakelet pan to make some Blueberry Honey Cornbread, and a scoop of chicken salad with Montmorency Dried Cherries and  Toasted Almonds.



My Beehive teapot is a favorite of mine for the summer.



The July Royal Albert teacup picks up the blue in  the teapot, and the Pomegranate Blueberry & Acai green tea is good hot or iced.

Yield: 6 cakelets and 2 mini bundts or an 8" pan

Blueberry Honey Cornbread

Blueberry Honey Cornbread

I used my favorite cornbread recipe that I've been using for over 50 years, but changed a few of the measurements and ingredients, and added blueberries.

Ingredients

  • 1 c. flour
  • 1 T. baking powder
  • 1/2 t. salt
  • 1/3 c. honey
  • 1/2 c. cornmeal
  • 3/4 c. milk
  • 1 egg, well beaten
  • 1 T. vegetable oil
  • 3/4 c. blueberries

Instructions

  1. Spray the beehive cakelet pan with baking spray that contains flour. You also can use a cast iron skillet or a 8" baking dish, or a muffin pan.
  2. Mix all the dry ingredients in a bowl.
  3. Add the milk and honey to the beaten egg & add the oil. Stir this into the dry ingredients.
  4. Fold in the blueberries.
  5. Pour into prepared pan. Bake in a 400 degree oven for 15-18 minutes for the cakelets, and 20 minutes if using a cast iron skillet or baking dish.

Chicken Salad

Chicken Salad

This is my old tried and true chicken salad recipe.

Ingredients

  • 4 cups cooked chicken, chopped
  • 2 stalks celery, sliced or diced
  • 1-2 green onions, minced
  • 1 T. lemon juice
  • 3/4 cup mayonnaise
  • 1/4 cup heavy whipping cream
  • salt and pepper
  • a handful of Montmorency dried cherries (or you can use cranberries)
  • 1/2 cup sliced or slivered almonds, toasted (or use pecans if you prefer)

Instructions

  1. Put the chopped cooked chicken, the celery, and onion into a bowl.
  2. Add the lemon juice, mayonnaise, whipping cream and salt and pepper amd mix well; add the cherries and almonds. Cover and refrigerate until serving.
  3. Scoop onto a lettuce leaf and serve.

  3. That's a nice summery meal and treat! Happy you had a break in the temps. I suppose you could say we did too. Although it's still pretty warm, I did get a break from watering 2 days with....RAIN! Forgot what that was!

  4. Hi Kitty, definitely making both. I love chicken salad. The muffins sound Yummy. I have dried cherries and dried blueberries, so I'm going divide the chicken salad and add cherries to one and some blueberries to the other. Where did you find your beehive cakelet pan?

    1. I hope you enjoy the recipes. I bought my beehive pan when it was on sale at King Arthur Baking, but you can find one from Nordic Ware or on Amazon.

  8. Hooray for cooler temps Kitty! We’ve had a slight cool down too and some much-needed rain, although more would be welcome. What a perfect use for your beehive cakelet pan! I’ll have to make a note to use mine for cornbread or muffins. The addition of blueberries and honey in your cornbread sounds wonderful and a perfect pairing with your chicken salad.
