It's too hot for hot tea, even though I always have it for breakfast in the morning. However, by afternoon, iced is the way to go. My friend, Rita, at Panoply, wrote to me after I made the Peach and Blueberry Crisp, recipe is here, and told me about the Blackberry Cobbler recipe that Jennifer Garner and her Mom did on her "pretend cooking show". Of course, I had to make it as berries in all forms, are my favorite. Thank you, Rita, for sharing this with me.
My lady head vase always makes me smile. Her name is Serena, and the poor thing has a crack in her face, but if a keep the water level just right, she doesn't leak.
This Blackberry & Raspberry Fruit Flavored Infusion is so pretty and is perfect for a refreshing drink. My cut glass pitcher belonged to my Aunt Gertrude, who was my paternal grandmother's sister.
Serving desserts in teacups is always a fun idea. This pretty teacup with the blackberries is called Lavinia by Royal Worchester.
Yield: 6
Blackberry Cobbler
This is really good with a scoop of vanilla ice cream or some whipped cream
Ingredients
3 cups fresh blackberries
1 tablespoon lemon juice
1/4 teaspoon almond flavoring
1 cup flour
1 cup sugar
1/2 teaspoon salt
1 egg, beaten
6 tablespoons butter, melted
Instructions
Preheat oven to 375 degrees.
Spray or butter a 10 x 6" baking pan (I used a 9" square pan).
Place berries in the bottom of the pan and sprinkle with lemon juice and almond flavoring and toss.
Sift dry ingredients together (I just use a whisk), then add egg, and mix. Using clean hands is the best tool for this. Sprinkle this mixture over the fruit.
Drizzle with the melted butter.
Bake for 30-35 minutes.
Notes
The recipe didn't say how long to bake this, but I guessed, and mine was done at 30 minutes.
There is some liquid from the berries after baking, but I just served this over the cobbler.

Poor Serena, but she's not the only one with a crack in her face! We all get them eventually. Have a good week Kitty. Watching the weather for TX family & friends. ReplyDeleteKitty, I love blackberries especially in a cobbler. It looks so pretty in a teacup and I just know it is delicious. We have blueberries and I made a blueberry-peach cobbler for the 4th. I agree, it is too hot for anything but iced tea!
