Favorite Meatloaf



Oh how meatloaf is such a comfort food! 

The recipe that I'm going to share is my favorite one.  I'm using my Johnson Bros Old Britain Castles plate of Blarney Castle.


I hope you can try it!




For a treat I fixed a cup of raspberry ganache tea that came in this Tea Forte set that I received from my neighbor, who also gave me this cup to brew the tea.  Aldi's had these raspberry truffles and oh are they so good, and perfect with my tea flavor.

Favorite Meatloaf

Favorite Meatloaf

This is a recipe that I've been making for years and adapted from Allrecipes.

Ingredients

  • 2 lbs. lean ground beef
  • 2 eggs, lightly beaten
  • 1 1/2 c. dry bread crumbs
  • 1/4 c. ketchup
  • 1/2 c. warm water
  • 1 (1 ounce) pkg. dry onion soup mix
  • Glaze
  • 1/4 c. ketchup
  • 1 T. brown sugar
  • 1 t. dry mustard
  • freshly grated nutmeg, to taste

Instructions

  1. Preheat oven to 350 degrees.
  2. Mix together the ingredients for the glaze and set aside.
  3. In a large bowl, combine the beef and all the rest of the ingredients. Mix well & put in a rimmed baking sheet and form a loaf which is uniform in size. I like to line the baking sheet with parchment or foil. Cover the meatloaf with the glaze.
  4. Bake for 1 hour or until no longer pink in the middle.

Notes

This recipe is easily cut in half.




Grandson Caiden came home from college to take his girlfriend to her Winter Formal.  My daughter, Molly, made all the bouquets for several girls.


Cissy was wearing my late beloved mom's jacket.



Little granddaughter Hayden had covid last week and had to miss her 100th day of Kindergarten, but she still wanted to dress up as a little old lady that she had planned on wearing.  Doesn't she look cute?  Harper also had covid and strep and missed over a week of school.

  2. Hi Kitty, one of my favorite dish patterns is Johnson Bros. Old Britain Castles and it looks so pretty on the white charger. A lovely Love centerpiece too alone with your Valentine's Day perfect red cup. I have perfect timing for your meatloaf recipe since I have it planned for today. My recipe is so similar but I want to do the changes and try yours. So sorry your sweet family had Covid! I hope they are feeling much better now. As always, enjoy the family photos........

  3. Kitty, I make my meatloaf the same way as you except for the glaze. I will have to make it that way next time. We just had it yesterday for dinner and leftovers tonight! I love the photo of Hayden. I hope they all have a speedy recovery and feel better. Kitty enjoy the new week.

    Oh, your meatloaf recipe is almost identical to mine! I use the recipe my mom used when we were growing up -- I love it. Mine has chopped onions, rather than the onion soup mix, but the ingredients for the glaze are exactly like mine (minus the nutmeg). Meatloaf really is comfort food, isn't it? :) Hayden is adorable as a little old lady; you just feel like you should help her cross the street, don't you? :D :D I'm sorry your grands have had covid; our son had it right before Christmas.

  7. Meatloaf is really such a humble food but when made the right way, it’s so good and I love the amazing mouth watering aromas from the oven as it bakes. Yum! We had meatloaf last week - maybe we’ll have it again this week too!

  9. Oh gosh, I hope the littles are feeling better. Meatloaf is a favorite and I love your plates. I have a few of the castles pattern, but just the salad plates. I found at a thrift store. I love your large dishes. Your daughter looks just like you and like she could be going to the school formal herself! Good genes!!

    Hayden's little old lady outfit made me smile. I would totally wear a cardigan with a dress, so I guess that makes me a little old lady? LOL.

  11. I love meatloaf and your recipe looks great, Kitty, just a little different than my own but one I think Mr.P. would eat!
    The kids are adorable. Molly's bouquets are beautiful, and poor little Hayden missing the fun of the 100th day, and Harper also being sick. No fun with all that sickness!

    Note to self - get to Aldi before the raspberry truffles are gone! Yum, they look so good, and what an adorable little tea mug. They have some of the best stuff in what is affectionately known as the aisle of shame (Aldi finds)!

  12. Meatloaf is a classic comfort food, I so agree! Your recipe is quite similar to mine, only I can't use onion soup mix, since my husband is allergic to onions. I add in other seasons instead. Your grandchildren are just precious - the bouquets are beautiful. So sorry the grands are suffering from the c and missing out on fun school activities! Many blessings to you dear friend!

  18. We like meatloaf in our family. Paul loves my turkey meatloaf. It is so moist with ground turkey and chicken broth. I will give your recipe a try for a change. The raspberry truffles and tea sound heavenly. So sorry about Hayden and Harper being sick. Hayden makes an adorable little old lady. Cissy is a beauty in your mom’s coat and Caiden is so handsome. You are so lucky to be surrounded with family.

  20. I love meatloaf, too! There is one particular one that I used to eat at Elder Beerman's in downtown Dayton, OH when I was young and working at a bank at the corner of Third and Main Street. I would walk over there on my lunch break and go upstairs to the cafeteria and order that meatloaf! I have tried and tried to imitate that recipe and have come pretty close to perfecting it, but no meatloaf since has ever completely measured up to Elder Beerman's! I even tried to get in touch with them to see if I could somehow get that recipe, but no success. They put green peppers in it and it just had the most distinctive taste. Your post took me down memory lane this morning. God bless you, sweet friend.
