Our temperatures have spiked back into the 100's! Sadly, I have to pretend that it's Fall. I used up my DIY Chai Spice mixture and made some snickerdoodles using the mix.
I'm using my pretty Royal Albert Flower of the Month Michaelmas Daisy teacup.
My friend Margie, at Tea in the Valley sent me three samples of pumpkin teas to try; two are pumpkin chai and one is a pumpkin cream. Margie is a tea connoisseur! Thank you, Margie! I am enjoying sampling them and writing down my thoughts.
These cookies are perfect with a cup of chai tea!
Yield: 4-6 dozen depending on size made
Chai Spiced Snickerdoodles
I have always used the recipe from Betty Crocker for snickerdoodles, but this time I adapted it using some of my chai spice mix.
Ingredients
- 1/2 cup butter, softened
- 1/2 cup shortening
- 1 and 1/2 cups sugar
- 2 eggs
- 2 and 3/4 cups flour
- 2 teaspoons cream of tartar
- 1 teaspoon soda
- 1/4 teaspoon salt
- 1 tablespoon chai spice mix (See NOTE)
- Topping:
- 1/4 cup sugar
- 1 tablespoon chai spice mix
Instructions
- Instructions
- Heat oven to 400 degrees.
- Thoroughly mix butter, shortening, sugar, and the eggs.
- In a separate bowl, thoroughly mix together the flour, cream of tartar, soda, salt, and chai spice mix. Add this to the creamed mixture and blend.
- Shape dough by rounded teaspoonfuls into balls, if you want small cookies, or walnut size balls for larger cookies.
- Mix the topping ingredients together and roll the balls into the mixture. Place 2" apart on ungreased baking sheets. At this point I refrigerated the balls because they seemed a little soft. Bake 8-10 minutes or until set. I prefer the 8 minutes. Cook a little longer for the larger size balls.
- Remove from baking sheets and cool.
Notes
DIY Chai Spice MIx:
4 teaspoons cinnamon
2 teaspoons cardamom
2 teaspoons nutmeg
2 teaspoons allspice
2 teaspoons ground cloves
1 teaspoon ginger
Those cookies look delicious! I love seeing all the grandkids all dressed up for homecoming.
ReplyDeleteYour cookies look great Kitty, and I bet they are perfect with the tea-enjoy:@)
ReplyDeleteYour chai tea and cookies sound so good. Love your collage of all the fun festivities. Beautiful grandchildren.
ReplyDeleteKitty, I am so sorry the temperatures have spiked upwards again!
Margie is just the sweetest! She is one of the most generous and sweetest blogger friends. I bet those teas are great!!
ReplyDeleteYou poor Texans! It seems when your temps are spiking up again ours here tend to be perfect. We have had 10 days of perfect low humidity 70s weather. It rained this morning and now it is cloudy - but still a very comfy temp. I don't even know how you can stand to back in such heat. Granted your a/c is working non-stop, but whew. Hope it passes soon.
I love your collage with the grands. They sure are cuties. ♥
Mr. P would be all over those cookies! The kids look so good. Those girls are hard to tell apart! And I've never seen a swallowtail with markings like those! I guess Texas didn't get the fall memo from Mother Nature.....maybe later this week.
ReplyDeleteThanks for the shoutout, Kitty! Glad you're enjoying the pumpkin teas.
ReplyDeleteThe chai spiced snickerdoodles look great! Next time I'll send you a sample of Dessert by Deb's Sweet Snickerdoodles black tea.

ReplyDeleteGood morning Kitty, I’d love to have a chai-spiced snickerdoodle with my morning coffee. Your Royal Albert September teacup is so pretty! I’m so sorry your temperatures have spiked again. I’m a heat wimp and struggle with temps in the 90s so triple digits are unbearable for me. Your friend Margie’s pumpkin spice tea blends sound delicious.
