I'm sharing an old post and a new post as I was out of town.I went to my youngest daughter-in-law's mother's beautiful celebration of life, and helped Kristen and her two sisters, along with my youngest son, Kevin, in preparing their mom's house for an estate sale and sale of the home. It was a special way of honoring them and their beloved mother.
I make these eggs every year!
Yield: 20, but really depends on how big you want them
Peanut Butter Easter Eggs
These eggs are a family favorite that I've been making for years!
Ingredients
- Candy:
- 4 cups powdered sugar
- 1 stick butter or margarine, softened
- 1 1/2 cups peanut butter
- 1 t. vanilla
- Coating:
- 12 oz. chocolate chips
- 1 T. shortening
Instructions
- Mix candy ingredients together until smooth. I do this in my mixer. Form into eggs & place on a cookie sheet that is covered with wax paper. I actually made 20 eggs from this recipe. You can now put these in the freezer for about 30 minutes to get really cold. You also can put them in the fridge to do later.
- Melt the chocolate chips with the shortening. I keep the melted chocolate in a bowl & place that bowl in another bowl of warm water. This way the chocolate stays smooth. Don't get any water into the bowl of chocolate! Dip the eggs in the chocolate & place back on the wax paper. You can decorate them with sprinkles or pipe names on with some melted white chocolate, if you wish, or leave plain. Store in the refrigerator.

Thai Chicken with Spicy Peanut Sauce
This recipe really isn't too spicy, but you can add more cayenne if needed.
Ingredients
- 4 large chicken tenders, cut into thin strips
- 1 tablespoon olive oil, or canola oil
- 3-4 garlic cloves, minced (or bottled garlic)
- About 1 tablespoon bottled ginger (I used frozen cubes from Trader Joe's)
- Cooked broccoli (I used about 10 ounces) See NOTE
- About 1/2 chopped peanuts
- About 1/4-1/2 cup chopped green onions
- 1/4 cup peanut butter
- 4 teaspoons white wine vinegar, or rice vinegar
- 1/4 teaspoon cayenne pepper
- 2 tablespoons sugar
- 1/4 cup reduced sodium soy sauce
- 1 teaspoon toasted sesame oil
- Cooked rice
Instructions
- Stir together the peanut butter, vinegar, cayenne pepper, sugar, soy sauce, and toasted sesame oil. Set aside.
- Heat oil in a non stick skillet over med-high heat. Add the chicken strips to the skillet, and add the garlic and ginger, and cook until the chicken is no longer pink.
- Add the cooked broccoli, green onions, and the peanuts.
- Reduce heat and add the peanut sauce mixture, and heat through.
- Serve over cooked rice
Notes
It's not necessary to add broccoli, but I thought it gave it some color.

These chocolate Easter eggs look wonderful -- I have already pinned the recipe. Unfortunately for my waistline, I've gotten addicted to that chocolate and peanut butter combination. ;/ I love, love Trader Joe's peanut butter cups.

I am so glad that you had the opportunity to go help out with your DIL mom's passing. What a blessing I am sure that you were to them all Kitty. Glad you are back safe and sound.
