Gingerbread with Lemon Sauce

We had freezing temperatures in the Dallas area this past week, and we were stuck inside .

Schools were closed, mail wasn't delivered, and I decided to bake my favorite gingerbread.   You can find that recipe here .  My pretty heart plate is one that I've had for years.  The teacup is Johnson Bros Rose Chintz.

My daughter gave me this LOVE container several years ago, and I bought a mini rose plant to put in it.  I have a fondness for angels and cherubs.

This glass teapot is so versatile, and was a gift from a special friend last year.  My youngest son and daughter-in-law gave me a blooming tea pod.  These are really fun to watch as the leaves unfurl.

Lemon Sauce

Lemon Sauce

This is a perfect sauce to serve over gingerbread.

Ingredients

  • 1/2 cup sugar
  • 2 teaspoons cornstarch
  • Dash salt
  • Dash nutmeg
  • 1 cup half-and-half cream (I used 1/2 cup heavy cream + 1/2 cup milk)
  • 2 large egg yolks, beaten
  • 2 tablespoons butter
  • Juice from one lemon
  • Zest from one lemon
  • Lemon sauce, combine first five ingredients in a small saucepan until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from heat.
  • Stir a small amount of hot filling into egg yolks; return all to pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from heat. Gently stir in butter, lemon juice and zest, increasing juice if needed to thin sauce. Serve with warm cake. Refrigerate leftover sauce.

Instructions

  1. Combine first five ingredients in a small saucepan until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from heat.
  2. Stir a small amount of hot filling into egg yolks; return all to pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from heat. Gently stir in butter, lemon juice and zest, increasing juice if needed to thin sauce. Serve with warm cake. Refrigerate leftover sauce.

Notes

This reheats well in the microwave.

What is the flavour of your flowering tea? I still have flowering teas from over 10 years ago! But I don't think that they go bad...
