Mandelbrot



The first week of Advent has begun, and I'm having some Mandelbrot cookies.


Would you care to join me?  I'm also having a cup of Constant Comment tea, one of my very favorites, and in this pretty teacup that my daughter gave me.  


My dear friend Joy and I,  bought each other these cute little light up chalets two years ago. 


My son Mike and I watched Bailey, my son and DIL's dog while they were on vacation. 

Three years ago I started making these Mandelbrot cookies for my DIL, Julie, who celebrates  Hanukkah. They are similar to biscotti, but are the Eastern European version, and not as hard in texture.  They are wonderful for dunking into a cup of tea or coffee.

Mandelbrot

These are the Eastern European version of biscotti. King Arthur Baking made theirs with chocolate chips and walnuts, and I went the classic route...Mandel=almond; brot=bread

Ingredients

  • 3 large eggs
  • 1 cup sugar
  • 1 cup vegetable oil
  • 1 teaspoon vanilla
  • 1 teaspoon salt
  • 3 and 1/2 cups flour
  • 1 teaspoon baking powder
  • 2 cups chocolate chips
  • 1 and 1/2 cups sliced almonds, chopped
  • coarse sparkling sugar

Instructions

  1. Beat together the eggs, oil, sugar, vanilla, and salt at medium-high speed until thickened and light colored; about 5 minutes.
  2. Beat in the flour and baking powder.
  3. Mix in the chocolate chips and the almonds. Cover and refrigerate for 3 hours, or overnight.
  4. Preheat the oven to 350 degrees. Lightly grease, or line with parchment paper, two baking sheets.
  5. Divide the dough into four even pieces, about 13 ounces each if you have a scale.
  6. Working with one piece at a time, place the dough on the prepared baking sheet, and shape it into an 8" x 2" log. Repeat for each piece of dough, leaving at least 2" between them, putting two logs on each baking sheet.
  7. Sprinkle the logs heavily with coarse white sparkling sugar.
  8. Bake the logs for 28-30 minutes, until they're set and beginning to brown on the edges and sides, but not all over. Remove them from the oven, and reduce the oven temperature to 300 degrees.
  9. Spritz the logs lightly with water; this will make them easier to cut. Allow them to cool for 10 minutes.
  10. Cut each log into 1/2"-3/4". You can cut them on the diagonal or crosswise. I used my bench scraper to do this.
  11. Place the pieces on edge, quite close together on the baking sheets, and return them to the oven.
  12. Bake for an additional 35-45 minutes, until a cookie feels baked through when you pinch it between your fingers.
  13. Remove from the oven, and cool the mandelbrot right on the baking sheets. The cookies become crunchier as they cool.

Notes:

You can vary the add-ins, by using pistachios and dried cranberries: butterscotch and pecans; walnuts in place of the almonds.
