Luscious Buttercream Frosting


I'm having some leftover cupcakes from my granddaughter, Hayden's, 4th Birthday party.

 


My brown calico teapot is another favorite of mine for the Fall.


  Hayden requested Nana to make the cupcakes for her party.  How could I resist??  I used a white cake mix, but substituted melted butter for the oil in the ingredients.

Our Marine Hero came home for a visit!!!!!  That's my daughter, Molly, hugging her boy!  We greeted Connor at the airport with our homemade posters.  We are so grateful that he is alive, and for all of your prayers and well wishes for him.  He gets to stay home for quite awhile before heading back to Camp Pendleton.


Hayden's birthday party had a Wild Thing theme, with animals that came to their backyard.  There was a little kangaroo, sloth, bunny, spider monkey, armadillo, and an otter.  The kids were able to touch, hold, and feed some of them, and learned a little bit about them.

Luscious Buttercream Frosting

This is a wonderfully creamy frosting that holds it's shape well. It's a LOT of butter, but it really is quite fabulous!

Ingredients

  • 3 sticks of unsalted butter, softened
  • pinch of salt
  • 1 and 1/2 pounds of powdered sugar (24 ounces)
  • 1 tablespoon vanilla (use clear vanilla if you want a perfectly white frosting)
  • 2 tablespoons milk

Instructions

  1. Beat the three sticks of butter in an electric mixer for around 6 minutes.
  2. With the mixer on low speed, add the pinch of salt,  and the powdered sugar, adding the powdered sugar a little at a time, until it's all  incorporated. I did about 2 cups at a time.
  3. Add the vanilla and the milk and beat the frosting for an additional 6 minutes.
  4. Add any food coloring that you want. 
  5. Pipe or spread the icing on. 

Notes:

This frosting holds it's shape very well. I used a pastry bag and piped on the frosting with a star tip. The original recipe said that it frosts 24 cupcakes, but I had frosting leftover, and could easily frost another 6 or more.

If the frosting is too thick, add about 1 tablespoon more milk.

  6. First, HOORAY!!!! Glad Connor is back home safe and sound!!! It’s never really real until it’s real! I know the whole family is happy and relieved and grateful to God for his safe return! And I’ll bet the hugs were plentiful all around!

    I'm so happy to see that Connor made it home safely. The family college at the airport made me a little teary-eyed. I hope his well-deserved break and visit with the family will refresh Connor's spirit and well-being.

  20. Oh, sweet friend! I was brought to tears by the photos of the precious reunion with Connor! I am so very grateful to God that he is safe and alive, and I know it is all due to his dear grandmother's prayers and all the other prayers. He is so blessed to have you in his life and the strong bulwark of faith you have built around him. My heart breaks for all the mothers and grandmothers and loved ones who did not get to have that reunion with their soldiers. Oh, dear Lord, help and heal all the broken hearts! I hope you get to be with Connor every second possible and enjoy the moments you have together. May God continually keep His protecting hand over him and always bring him safe to you, in Jesus' name.

    Love the Brown Calico. I only have one piece, a cow creamer. Would love to find some plates. I did find a demi tasse cup and saucer in Blue Calico this afternoon at a local thrift. It came home with me. I think it will be in a place setting with candy corn. 😂😂😂
