Strawberry Pie


 

Please join me for one of my all time favorite pies!  My daisies and my limelight hydrangeas (thanks for the recommendation, Mary !) are from my garden.

I've been making this pie for over 50 years, since I clipped the recipe from a Columbus, Ohio newspaper.  

 

This is my row of daisies, which I started from three plants years ago.  I just keep transplanting pieces of it.  These bloom from late June through September.  Way down on the right, I have two limelight hydrangeas.  I was happy that they made it through our arctic blast back in February.  I also have my loofah plant growing, which I'll show later on in the summer.

Strawberry Pie

Strawberry Pie

I've made this pie more than any other pie in my baking years. It's so tasty and it's a family favorite.

Ingredients

  • 1 baked pie shell
  • 1 quart strawberries, cleaned and hulled
  • 3/4 cup sugar
  • 3 tablespoons cornstarch
  • 1 cup water
  • 2 tablespoons light corn syrup
  • pinch of salt
  • 3 tablespoons strawberry gelatin

Instructions

  1. Combine sugar and cornstarch in a saucepan.  Add the water, corn syrup, and the salt.  Cook, while stirring, until the mixture turns from opaque to clear.
  2. Remove the saucepan from the heat, and add the strawberry gelatin.  Cool this mixture to room temperature.
  3. Pour the syrup over the berries and mix gently.  I usually cut the berries in half, and then arrange them prettily on the top of the pie so that the cut halves are down. 
  4. Pour into a baked pie shell and chill.

Both your teacups are so pretty but I’ll sip from the Johnson Brothers please. :) So glad your Limelights are doing well and blooming!   15. Boy do I love strawberry pies, and my niece always requests one for her birthday. Our strawberry season ended, but my farm folks told me the hydroponic strawberries will be ready in one week! So excited.

  17. Kitty, I'm so sorry I've missed so many posts! I haven't gotten any of your email updates in a long while and have been so occupied myself lately, I figured you were busy as well. I should have remembered that Google's Feedburner Subscription service had expired. I have you in my blog list (which I usually don't look at) but now I'll start! I love that pretty strawberry cup and saucer set! What a gorgeous looking pie too. I love fruit pies in the summer!

  20. This was one of my grandmother’s favorite pies. It surely must have been, because she had five or six recipes for it in the tattered cookbook that I inherited from her. As a kid, I would run from this sort of thing. At the moment, it’s all that I can think about, it looks so good! I love your tea cup with the strawberries. What a perfect accompaniment to the pie.
