Refrigerator Rolls



I wasn't going to start decorating before Thanksgiving, but I started it anyway, since I'm not hosting.  It's always festive when the decorations are out, but it takes me all day any more.   These rolls are so good and I'm having one with some of my Christmas Jam.

It's always nice to bring out my old dishes that my late beloved and I collected from various Target stores, over 30+ years ago, back when Target was called Gold Circle.  I'm having a cup of Harney and Sons Holiday Tea. 


I made this tea cozy last year, and it's reversible.  I think it goes well with my dishes.

My dear daughter bought me all these cooking utensil ornaments for my little kitchen tree.  I put an angel cookie cutter on top.

I shared this roll recipe in my first year of blogging, which can be found here and wanted to share again.  The dough keeps in the fridge for a week, which is nice if you want to plan ahead.  It's a very sticky dough, but makes the best rolls, which I've been making for over 40 years.

Refrigerator Rolls

This recipe was given to me my longtime friend, Susie, back when we were neighbors in Ohio. I've adapted the recipe slightly over the years. Back then, it called for a cake of yeast. Susie got the recipe from a Mennonite friend. It makes great cinnamon rolls, too, by rolling out, spreading with butter and sugar and cinnamon.

Ingredients

  • 1 1/4 cups warm water
  • 1 T. yeast
  • 1/4 cup sugar
  • 1 t. salt
  • 1/3 cup oil
  • 3-4 cups flour

Instructions

  1. Put all the ingredients in a large bowl and mix. I use my Kitchen Aid, but you can easily do this by hand. Add the flour, starting with 3 cups. I usually use about 3 1/2 cups of flour. Cover the bowl & refrigerate for 1 day or up to 1 week.
  2. Take the dough out of the refrigerator 2 hours before you need it. Shape the dough into balls. I usually get around 18-20 rolls. I roll the balls into a little flour before shaping them because the dough is rather sticky. I put them into a greased 9 x 13 inch baking pan. Cover & let rise until doubled in size.
  3. Uncover & bake the rolls in a preheated oven at 350 degrees for 20-25 minutes, until the rolls are golden brown.

Notes:

 You can skip the refrigerator rising & just let the dough rise until doubled, punch down & then shape & let rise again until doubled.

    Same here - just us, so I started decorating for Christmas. It's been fun taking my time and paring things down and keeping it more simple and relaxed this year.

  3. How beautiful your living room looks decorated for Christmas, Kitty. Your mantlepiece looks fabulous. Love the large star and the glittering lights. Love too, the sweet angels looking upon the room. I have to say I am in love with the inbuilt cupboard/bookshelves that fit snugly either side of the fireplace. Sweet mug and plate, too and yes your pretty tea cosy fashioned by you is perfectly Christmassy. I did not know that Target used to be called Gold Circle. The things I learn from your blog. =) As for the rolls, you've won me.

  4. Kitty, I adore your little kitchen Christmas tree with your cooking utensil ornaments and angel cookie cutter tree topper! I haven't started decorating yet but did sort my ornament boxes in the attic and we brought the tree down from the attic yesterday. It takes me several days to get the tree decorated the house is a wreck for a solid week. :) Your rolls sound delicious and perfect with your Christmas jam and tea in your pretty mug.   5. Oh, Kitty! It looks so beautifully festive over here. I hear through the grapevine that many folks are decorating early this year. I get it. If we ever needed a bit of cheer and lights, it is now,

    I am blessed not to ever need to bake rolls. My son makes the most marvelous ones for all major meals together. He truly has become the expert roll-maker in the family.

  8. There isn't anything better than a homemade roll Kitty! And the fact that you have been making them for so long is a true testament! I started decorating too, I've never decorated before Thanksgiving, but as we will be away Thanksgiving weekend, I wanted to get a head start and not feel overwhelmed when I got back! Your tea in front of your fire place with your little tree is so cozy!

    As always, your recipes and posts are a delight.
    I will most certainly be making these dinner rolls for our Thanksgiving dinner because it will allow me to make the dough ahead, I need that this year.
    You know...your Christmas jam is my all time favorite! I have one jar in my cupboard from last year's batch :-)

    I absolutely do understand why people are decorating early! I don't blame them one bit, but I am holding on to the warm colors of harvest at least through Thanksgiving day. After that ... I am very likely to jump on the Christmas decorating bandwagon too.

  22. I can taste your delicious rolls, Kitty. I love those. Your table looks very festive. I know exactly what you mean about it taking longer to decorate.
    I'm just starting and it took me all morning to put up the fall decor. I have way too much.I always wait until after Thanksgiving. I think since all my kids were coming last Christmas I did start early but we won't be here this Christmas. I probably won't get everything out. We will see.

  25. Kitty, your rolls look so delicious. I haven't made yeast rolls in a while. They generally are a lot of work but well worth it! We have our tree up but no other decorating done yet. It does take longer than it used to and I need to hop to it or it will be time to take them down! xo
