Cowboy Cookies

I just had to buy some pretty sunflowers from Trader Joe's to use with one of my favorite plates.   We can enjoy some Cowboy Cookies with a cup of tea, and sit by my waterfall.

This teacup goes with so many things, and I just love the pattern.

Yield: Depends on size of cookie

Cowboy Cookies

This recipe comes from Cafe' 43, when my friend Joy and I went to the Bush Library. I had copied this recipe years ago from a magazine,  but it made such a large amount. This recipe is half, and printed out on a package of the cookies.  The cookies are so good!

1 stick butter, softened
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 teaspoon vanilla
1 cup flour
1 teaspoon baking powder
1/4 rounded teaspoon salt
1 teaspoon cinnamon
1 cup oats
2/3 cup coconut
2/3 cup chopped pecans
1 cup chocolate chips

Cream butter and sugars.
Add egg and vanilla, and beat together.
Add flour, baking powder, salt, and cinnamon, and beat until blended.
Stir in remaining ingredients.
Drop by spoonfuls onto cookie sheet.
Bake at 350 degrees for 10-15 minutes.

I had some oral surgery this past week, and my daughter and her two oldest came to visit me.  I loved seeing their smiling faces!

This little sweetie came to spend the night with me.  We always have breakfast and tea in bed!  Of course we did some baking together, which is always fun for us.

I'll leave you with a happy photo of sunflowers, which always make me smile!

I am sharing with these lovely parties:

  1. Kitty, I hope you're recovered from your surgery! Tea, cookies, sunflowers and a visit from those adorable grands sound like the perfect recipe for a speedy recovery. ♥

  2. Sunflowers always make one feel happy and cheery. Love your sunflower plate, Kitty. Such a lovely photo of you with your grandsons. How lovely you had visits from them and their mum to help cheer you up. Breakfast and tea in fun. I would imagine Cissy would always put a smile on your face. I hope you are feeling better soon, my lovely friend.♥

  3. Those handsome grandsons of yours are towering over you!

Hope that you are feeling much better post surgery.

Oh my...cutest overnight guest with the fab smile...even better than sunflowers. 🌻

These cookies were among my mother’s favorites probably because they make such a big batch. A smaller batch is better for a smaller family.

  4. Dearest Kitty, hoping you are much better from the oral surgery. Bless your heart. I love the pictures of those precious grands. And look at your tiny cute little self. Oh the days I remember my granny making cowboy cookies! YUM! Sure wish I had one now. Thanks so much dear friend for checking on me. Hugs and blessings, Cindy

  5. Beautiful post with pretty sunflowers and adorable Grands! The cowboy cookies look delicious and I do love your dainty tea cup.I hope you get better soon from the oral surgery.Greetings!

  9. Kitty, I just love sunflowers too. They are sunshine growing in the garden! Such a sweet teacup and saucer, pretty design and color and of course the sunflower plate is gorgeous. Sweet grands, wow are those boys growing up or what? Of course I know how much Cissy loves to come and how much you enjoy baking with her. I sure hope you are feeling better and recovered from you surgery. Take care sweet Kitty, sending a hug.......

    1. PS: I forgot to tell you how wonderful the cookie recipe looks. I'm sure they were yummy......

  10. Your grandsons tower over you Kitty! Good looking young men, they are. Bet they could eat all the cowboy cookies you could make - in one sitting! You & Miss Cissy are such a cute pair. I can imagine your little chats over breakfast in bed. ♥
Hope your oral surgery went well. That's my least favorite kind of medical care in the world. Hate going to the dentist for even a cleaning! I think I was traumatized as a child, lol.

  11. Wow, Kitty, you should feel well protected by those nice big young men!
Love cowboy cookies and it is nice to make a lot all at once to give away and freeze. Your teacup and plate are so pretty with your flowers.
Hope you are back to normal soon.

  15. I am going sunflower crazy this year, I just love having them around! I hope your surgery went well, not fun, but such adorable visitors! You and Cissy know how to have girl time, breakfast and tea in bed!!

  16. These cookies look so good! I have been dying for homemade cookies, so today I thought I would make a recipe for a pizza size chocolate chip cookie. I thought I could cut it into nice wedges, freeze a number of them, and take them to my dad. I was paying close attention, or at least I thought I was. Instead of using all purpose flour I ended up using white lily baking flour. The cookie escaped the cookie sheet, ran over on all sides, and burned on the bottom of my oven. I thought I had set the place on fire from the billows of smoke. Tomorrow I am going to make these. Thanks for the recipe, and thanks for cutting it in half. That makes things so easy.

  17. My husband would love these cookies, i'll have to jot this recipe down for sure! Hope you are feeling better from your surgery. Great pictures too.... hope your week is off to a great start.

  18. I do hope you are feeling better after the dental surgery...that couldn't have been much fun! You look so small next to those grandsons of sweet of them to come check on you! The cookies really look amazing!

  20. Oh how I LOVE Cowboy cookies - favorite cookie from my mom's kitchen when we were growing up. But hers didn't have coconut...I know I would love them with coconut too. Great photos of your look so tiny compared to those growing grandsons. I love that you make sweet memories with Cissy, having tea in bed. Too fun! Trust you are recovering nicely from your surgery. Healing Hugs and prayers!! XO
