Buckeyes


We recently had a Ohio State (my Alma Mater) vs. Michigan party at my son and DIL's house.  I made cream puffs, which you can find the recipe here and Buckeyes. Buckeyes are just peanut butter candy coated in chocolate and they resemble buckeyes, the namesake of Ohio State. I kept some back to have with some chai tea. Here's the recipe:


Candy

4 cups confectioners sugar
1 stick butter, softened
1 1/2 cups peanut butter

1 tsp. vanilla

Coating

6 ounces chocolate chips
about 1 tsp. vegetable oil

Mix candy ingredients together.  Form into small balls and put on a baking sheet that has been lined with wax paper. Put the balls into the freezer for a bit to make dipping easier.

Melt chocolate chips (I do this in the microwave at 50% power, until the chocolate is smooth).  Add the vegetable oil and stir. Dip the balls into the chocolate, leaving a spot open on top to resemble buckeyes. You can use a toothpick to do the dipping, or a fork.  Just smooth the tops to cover the hole.  Place on wax paper to dry. Store in covered container. May also freeze.

  3. Wasn't that a great game? DH loves OH State but his son went to Michigan for his undergrad degree & then to OSU for his medical, so he is always torn during this rivalry.
    Your Christmas tablecloth looks lovely beneath that pretty lantern & red & white dishes! I'm very familiar with the "Buckeye" candy, as my sisters make it every year. The cream puff looks luscious, too.
    I think I'll join you in a cup of chai tea later today. Wish we lived closer & could share one in person.

  13. Hi Kitty. I am so excited. When I was working, a woman in the office used to bring cream puffs in all the time and we were all crazy for them. She would not give out her recipe for the filling, but your's sounds like it would taste just like hers. I am so anxious to try it and I'll let you know how it goes. FYI: It might be just me, but when I clicked on the link for the recipe it just said the post was no longer available. So I just wrote in cream puffs in the space on your sidebar for "search this blog". In case anyone has the same problem..Happy Tuesday..Judy

  14. Oh Kitty wasn't that game a heart stopper? I nearly died.

    My son-in-law and his father and brother and assorted friends of courses were there with their travelling tailgate party called The Buckeye Squad and were parked literally a stone's throw from the stadium. The Buckeye Squad is a retired ambulance-come-travelling tailgate, complete with a grill, smoker, flat screen, tents, tables, chairs, kegs, coolers - you name it. : - )

    What a GAME ....and then the "Bama upset, holy moley what a weird game day Saturday turned out to be.

    Wish I had a few of those amazing looking buckeyes to eat, they're my favvie favorite yummmmmm.

    I made 300 of them once for this big work shindig when I was a bank manager for a grand opening near campus.......had them wrapped up and in the garage so they would be firm when I took them...........and believe it or not my youngest daughter's guy buddies ATE THEM GONE - seriously almost none left. You just know how labor intensive they are to make, I about killed them. LOL - we were talking about that just the other day. She is still mortified that happened - she had no idea. Teen boys need to be caged, glad I just had daughters!

  17. These do look just heavenly! We had a buckeye tree come down in a blizzard in Burlington, Iowa years ago - you sure captured the way I remember them! They would sure satisfy my sweet tooth Kitty!

  18. Those will be good to serve on BCS day, that is if OSU makes it past Michigan State. If it does and FSU passes up Duke, we will be cheering for opposite teams!

  20. Kitty, both of these recipes look wonderful -- they're making me hungry! All your recipes always look so good. Your buckeyes remind me of a recipe my sister used to make at Christmas, but she poured hers into a pan and sliced them into squares. I'm so glad you shared these with us.
