Three Bean Chili

Miz Helen from Miz Helen's Country Cottage is having her annual chili cook-off.  I've decided to make a 3-Bean Chili for my entry.  I hope you try it!  it's spicy and oh-so good. Be sure to check out all the great recipes to choose your favorite one at The Texas Star Chili Cook Off 2013.  


1 T. olive oil
1 onion, diced
1 red bell pepper, diced
1 T. ground cumin
1 lb. ground beef
1 (28-ounce) can crushed tomatoes
2 cups water
1 chipotle in adobo sauce, minced (add more for extra heat)
2 t. adobo sauce from the can of chipotles
1/2 t. dried oregano
salt and pepper to taste
1 (15.5- ounce) can black beans, drained and rinsed
1 (15.5-ounce) can kidney beans, drained and rinsed
1 (15.5-ounce) can pinto beans, drained and rinsed


Heat the oil in dutch oven over medium heat.  Add the onion and bell pepper, cover and cook, stirring occasionally until the vegetables are soft.  Add the cumin and cook, stirring, for 1 minute.  Add the ground beef, raise the heat to high and cook, breaking up the meat with a spoon, until the meat is no longer pink.  Stir in the tomatoes, water, chipotle and adobo sauce, oregano and salt and pepper.  Simmer partially covered, stirring from time to time, for 30 minutes.  Stir in the beans and cook, partially covered, 20 minutes longer.  Season to taste with  additional salt and pepper.

If desired, top with shredded cheese, sour cream and avocado and enjoy!

    I too made a big pot of chili Monday so this is our 3rd and last night to have Chili. The rest I put in the freezer. This recipe you have looks wonderful!

  3. Kitty, the chef hasn't made any chili for us as yet. It's one of our favorite fall and winter dishes though. Your recipe looks delicious. Love the addition of the avocado slices. '-)

  4. This sounds good Kitty! I love the addition of the chipotle! I've never added avocado to chili but do see it often, might have to give it a try one day:@)

  5. I can't hardly make it through fall without a weekly dose of chili or some warm soup with beans. (I'll resist the urge to say that fall is a real gas around here... or maybe I won't.) We're having a chili contest at church at the end of the month. This would be a different recipe than I usually use so maybe I'll make yours instead. If I do and win, I will let you know so you can take a bow.

  6. Sounds amazing! I love chili this time of year so this will be add on to my list of recipes to make :) And avocado slices - yum! I have never tried that, but it sounds delicious.
