Chicken Pot Pie with Puff Pastry Crust

 
For my Chicken  Pot Pie table, I've used my crocheted topper along with pretty red polka dot placemats.  I made the black and white gingham napkins. 
 
 
The polka dot hen is from Hobby Lobby, which is nesting in a basket.  The candle came from Wimberley, TX and I added a polka dot bow to carry on the theme. 
 
 
The cheery polka dot ramekins are from Ross and I've used my red Cambridge flatware. 

 

I am on a roll with Puff Pastry lately and wanted to make a comfort dish and decided on chicken pot pie.   I had never tried puff pastry on top, but after making it and my hubby declaring it "the best chicken pot pie ever", you'd better believe that I'll be making it this way from now on!!

3 Tablespoons butter
1/2 cup chopped celery
1 cup sliced mushrooms
2 Tablespoons chopped onion
3 Tablespoons flour
1 1/2 cups chicken stock
1/4 teaspoon poultry seasoning
some fresh thyme, taken off the stems or some dried thyme
 3 cups cubed cooked chicken

1 sheet of puff pastry
1 egg beaten with 1 T. water


Melt the butter in a large skillet.  Add the celery, onion, and mushrooms and cook about 5 minutes.  Stir in the flour and cook for about 1 minute.  Add the chicken stock, poultry seasoning, and fresh thyme.  Stir and cook until thickened.  Add the chicken and heat through. 

Cut the puff pastry into fourths.

Divide the chicken mixture into four 8-ounce ramekins.  Wet the rims of the ramekins with some water.  Top each ramekin with the puff pastry square, press down around the rim.  It's okay to have an overhang of pastry.  Cut a slit in the top to vent.  Brush with the egg wash.   Bake at 375 for about 25 minutes or until golden brown.  YUM!

NOTE:  You could but this in a square baking dish and just top with the sheet of puff pastry.

  1. Good Evening Kitty, My husband is a "pie eating man" and I just know he is going to love this pot pie you have made. Looking at the recipe, I think it is the celery which makes the difference to the pie.

  4. Kitty, this is on my to make list!!! It looks so wonderful with that drapey crust! I have that flatware, too. Just love the color of the red! Chicken, ferns, crocheted lace, polka dots and gingham.. well that is the mix of all great things! The polka dot chicken is so cute!!! I have a mate for it!   11. MMMMMMMMMMMMMMMmmmmmmmmmmmmmmm I love puff pastry-topped chicken pot pie!

    It's what I ordered when my eldest daughter and I ate at The Lady and Sons restaurant in Savannah! (I love Paula Deen!)

    I have made her recipe quite a few times - her puff pastery was braided on top, which isn't easy but sure makes a lovely presentation!

    If it continues to rain and be chilly I just may have to make this now that you have my mouth watering, Kitty - yum, looks SO DELISH!!! (And your tablescape looks so cute!)

  14. This is EXACTLY what I was going to cook tonight!!! Ramon ended up taking us out to eat at Perkins after spending forever in the stupid Home Depot store, so I didn't make it. I am going to use YOUR recipe tomorrow when I make it for dinner!!! I have already cubed my chicken and cut up my vegetables, so it should be easy going! I was going to make the pastry from scratch, but I have some puff pastry in the freezer, so I think I'll use that instead. Yours looks really good, especially overhanging like that. That looks quite European, my dear! :-)

I was really interested to see the nesting hen, as I have been looking for one to put inside a metal basket that has a top on it for my kitchen. Yours is adorable!   24. What is it about polka dots that are so happy? That red hen is just the pride of the table isn't she? She is absolutely adorable and sets the whole mood. I haven't made a chicken pot pie this year, but making them in those polka dot ramekins really makes them fun. Yes, puff pastry is the best and just topping it is perfect. I love how you made it so rustic by hanging it over the edges - that way you end up with more puff pastry to enjoy too!

  25. Charming! Love the whimsy of red and white dots and blk and white checks! The table and the red chicken centerpiece are so inviting. Love the recipe- bet I could make it vegetarian by substituting vegetable broth and non-meat 'chicken' since we don't consume meat. Have a lovely Mother's Day! :)
