Blackberry and Raspberry Frozen Yogurt



It's getting hot and steamy here in Texas, and I decided to make some frozen yogurt.  My son makes homemade yogurt in the Instant Pot and we had a surplus, and I found a recipe for this beautiful treat. 


A dear friend gave me this gorgeous purple Oxalis plant.  Another dear friend gave me the metal heart shaped basket so very long ago. 

My friend, Pat and I, had lunch at a tearoom/antique mall awhile back, and we both fell in love with this blackberry teacup, which is a Royal Worchester, Lavinia pattern.  We each bought one to give to each other.


This Blackberry Sage Tea refreshes, whether it's served hot or cold.  I don't know if it provides wisdom, like the canister says, but it is tasty!

Cissy and Harper and Hayden came over to have a slumber party at my house!!  Of course our time was filled with JOY!

Raspberry and Blackberry Yogurt

Raspberry and Blackberry Yogurt

This frozen yogurt is so pretty and perfect for a hot summer day. My son makes yogurt in the Instant Pot and we had a surplus, and this frozen yogurt came to the rescue!

Ingredients:

  • 2 heaping cups raspberries and blackberries
  • 1 cup sugar, divided
  • 4 teaspoons  fresh lemon juice
  • 1 and 1/2 cups ( 2% or whole milk yogurt, standard or Greek (not nonfat)
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla
  • pinch of salt

Instructions:

  1. In a saucepan, combine the berries, 1/2 cup  of the sugar, and lemon juice. Mash the berries with a potato masher until they're broken up and juicy. Cook the berries over medium-high heat until the juices are thickened and jammy, 7 to 10 minutes. Use a rubber spatula to press the berries through a fine mesh sieve into a bowl and transfer to the refrigerator to cool completely. Discard the skins and seeds.
  2. When cool, whisk in the remaining sugar, yogurt, heavy cream, vanilla extract, and salt until the sugar has dissolved completely. Chill until completely cold, at least 2 hours, in the refrigerator then churn in an ice cream machine according to manufacturer's instructions. Enjoy immediately as soft serve or transfer the frozen yogurt to a freezer-safe container, cover and freeze until firm.

Strawberry Whipped Sensation Pie

 I'm having a slice of this Strawberry Whipped Sensation Pie that my darling granddaughter and I made the other day, when I picked her up after school.  I have more in the freezer, if you'd like to stop by.

 

 This Roy Kirkham teacup is one of my favorite summer ones.  It's called Alpine Strawberry and I love the bees that are on the cup and the saucer.


 Here's Cissy busy squeezing the lemons.  I had lots of lemons, but I would never judge, if you'd like to use bottled lemon juice.  In fact, we used a shortcut and used prepared crusts for our pies.  Making things easy for kids is a good idea.  We also doubled the ingredients and actually got three pies.  I have one to take to a friend that recently had surgery.

Strawberry Whipped Sensation Pie

I tried this as a dessert from Kraft, but decided that it was easier, and less messy in pie form. It's really a perfect, cool, easy summertime recipe.

INGREDIENTS:

  • 2 cups fresh strawberries
  • 1 can sweetened condensed milk
  • 1/4 cup lemon juice
  • 1 tub (8 oz.) frozen whipped topping, thawed and divided
  • 1 Oreo cookie crust (or make your own)

INSTRUCTIONS:

  1. Mash 2 cups berries in large bowl.
  2. Add the sweetened condensed milk, lemon juice, and 2 cups of the thawed whipped topping.
  3. Pour into the pie crust. Frost with additional whipped topping. Cover and freeze for 6 hours.

Raspberry Whipped Sensation Pie

 My sweet, little bear is here to greet you on this hot Texas day!  Whew!  Let's get on with this party so we can get to that yummy frozen pie,  before it melts in the sultry heat.


I'm using this pretty candle that Celestina Marie gave me at the Fall teacup exchange, hosted by Stephanie, at The Enchanting Rose.  I turned the teacup, that my sister gave me,  upside down,  and used the pretty saucer as the base for the candle.  This little wagon is used on my kitchen table for my 4th of July decor.


 This retro style teacup was given to me by Deborah, at The Beautiful Matters, and looks so pretty on my Big Star Quilt topper that I made several years ago.


 One of my favorite summertime desserts is the Strawberry Whipped Sensation Pie, found here.  Since I LOVE raspberries so much, I decided to make this pie with them.  I'm thinking that mixed berries would be good, too.  I can't begin to tell you how cool and refreshing this pie is.  Here's the recipe, if you'd like a cool, easy treat for summer:

 

 Raspberry Whipped Sensation Pie:

 

2 cups  fresh raspberries,  plus some extra for garnishing
1 can  (14 oz.) sweetened condensed milk
1/4 cup  lemon juice
1 tub  (8 oz.) COOL WHIP Whipped Topping, thawed, divided
1 Oreo or chocolate cookie crust


MASH 2 cups berries in large bowl. Add milk, juice and 2 cups COOL WHIP; mix well. Pour into prepared pie crust. 
         
FROST with additional COOL WHIP.  Cover and freeze for 6 hours. 
If desired, garnish with additional raspberries before serving.
 
 

My caladiums, begonias, oxalis and thyme or rebounding after our hailstorm, from back in April.  Yea!
