Strawberry Dream Pie


We've had so many over 100 degree days so far this summer; I'm betting it'll be a record. I made a pie that I tried to recreate that my dear mom and I would make back in the 1970's.  There's no baking involved, and that's a good thing.  The beautiful embroidered strawberry tablecloth was sent to me from Bernideen at Bernideen's Teatime Blog.  I always admired it and she sent it to me as a surprise.  Isn't it exquisite?  Thank you, Bernideen! 

I do use my teacups every morning with a pot of hot tea, and this is a favorite.  However, in the afternoon, it's ice tea for me.  That'll be my drink of choice until around October.  


This strawberry pitcher is on my kitchen table for now, along with my strawberry plates.


These two cutie pies spent the night with me while their parents packed up for their month long trip to Colorado.  We made white chocolate teapot lollipops, and of course they swirled the different colors together.


We went swimming to cool off and enjoyed treats poolside.

Strawberry Dream Pie

Strawberry Dream Pie

I tried to recreate a recipe that my mom and I made back in the 1970's. I think it's pretty close. The filling would be good just spooned into dessert dishes, too.

Ingredients

  • 1 graham cracker crust, either homemade or store bought
  • 4 ounces of cream cheese, softened
  • 1 small package of strawberry gelatin (sugar free works, too)
  • 1/2 cup boiling water
  • About 1 cup of chopped strawberries
  • 1- 8 ounce container of frozen whipped topping, thawed

Instructions

  1. Pour the boiling water over the strawberry gelatin and mix thoroughly. Refrigerate the mixture for about 10 minutes, until slightly thickened. Do not let gel all the way.
  2. Cream the softened cream cheese in a mixing bowl (you can also do this in a blender or food processor). Slowly add the slightly thickened gelatin mixture, and blend.
  3. Fold in the thawed whipped topping and the chopped strawberries.
  4. Spoon into the pie crust (or spoon into individual dessert dishes).
  5. Refrigerate, and enjoy!

  1. Kitty, No-bake treats are a must in your heat! I wouldn't be able to handle those temperatures for the summer months. I love your strawberry pieces, including your newly gifted tablecloth.   5. I would have to simply stay inside with that many hot days, garden on its own! Wow, Kitty. But tou certainly make things looks cool with your no bake treat in cheery strawberry theme. I've bought a tea cozy from Bernideen as a gift. What a nice surprise she gifted you. Those grands are so adorable. Amd the pool time looks like the best way to beat the heat!   10. YUM boy oh boy doesn't that look amazing? Yikes on your heat. I think the really nice weather was pushed east to Ohio b/c our weather has been the best of my life. Hot but not too hot- and we've had so many mid 70s days. Please feel free to come visit!

  23. I'm going to give this a whirl. I love pie! Pie is my life!!! I could eat pie every single day of my sad little life!!! With the temps up so doggone high, though, my favorites this time of year like blueberry and cherry are kinda off the table. I know I'd have to make the graham crust, but that's only about 10 minutes of oven time vs an hour, so I'm in!!! Have fun with the kids! Wow...a whole month! That's a nice long vacation!!!
