Rainbow Bread



My youngest son and daughter in law went skiing and my son, Mike, and I watched Harper and Hayden for a few days after our frigid shutdown in Texas.  It was a busy time of tea parties, baking, cookie dipping, slushies from  the neighborhood Ice Cream Truck, and gnome making out of socks.  My son made them an Olaf snowman and drew pictures of Olaf for them to paint.  Harper had kindergarten upstairs with three other little girls and a wonderful teacher.  Hayden was a busy ballerina and tap dancer. 


These were our candy dipped Oreo cookies that we had for a tea party. You can purchase molds at Michael's or JoAnn's for making these quick and easy treats. 

 

 

 This was our rainbow bread dough.  I made this several years ago and you can see some of my other grandchildren here.

I love looking back on the grands' younger pictures of fun times in my kitchen.

Rainbow Bread

Rainbow Bread

This is a fun activity for young ones and the recipe was given to me from my friend, Mary, who had been a preschool teacher.

Ingredients

  • 2 packages active dry yeast
  • 1 T granulated sugar
  • 1 c warm water [100° to 115° F, approximately]
  • 1/3 c olive oil (or vegetable oil)
  • 3/4 c hot water
  • 2 t salt
  • 5 1/2 to 6 c AP flour (start with 5 cups)
  • cornmeal or semolina flour

Instructions

  1. Stir the yeast, sugar and warm water together in the bowl of a stand mixer; let sit until yeast dissolves and starts to proof.
  2. In the meantime, add the olive oil to the hot water and let cool to lukewarm. Add the salt, and combine with the yeast mixture. Stirring vigorously with the dough hook attachment, add the flour 1 c at a time, until the dough almost comes away from the sides of the bowl. [The dough will seem rather soft and sticky at this point.] Continue kneading the dough with the dough hook, adding a couple tablespoons of flour as you go along. Alternatively, you could turn out the dough onto a lightly floured board and knead with your hands. Continue kneading until the dough has absorbed enough flour that it is easy to handle, about 2 to 4 minutes.
  3. When the dough is soft and smooth, let rest for 5 or 6 minutes and then divide into two. (At this point, you add your food coloring to dough that has been separated into as many colors as you would like. You can have the child then put them together and stack and twist them). Without food coloring, you roll each half into a rectangle about 12″ x 8″. Starting from the wide end, roll the rectangle up quite tightly, pinching the seams as you roll. Let the rolled loaves rise on a piece of parchment paper, that has been sprinkled with cornmeal or semolina flour, in a warm, draft-free place until doubled in bulk, about 50 to 60 minutes. Place a baking stone* on the middle rack of the oven and preheat to 425° F while the bread proofs. (At this point, I slashed the of the loaves).
  4. After the dough has doubled in bulk, place the loaves on top of the hot stone, parchment and all (I use a rimless cookie sheet to transfer the loaves). Bake 30- 40 minutes (directions said 40, but this was too long for my oven!), or until the loaves are a rich, golden color and make a hollow sound when you tap the crust with your knuckles, top and bottom. Cool on a rack and slice when fresh.
  5. *If you have no baking stone, butter one or two baking sheets well and sprinkle with cornmeal. Place the just-rolled loaves on the sheets, and then let them rise until doubled in bulk. Bake the loaves on the sheet[s] on the middle rack, the same as you would with the stone.

Pretzel Shamrocks for St. Patrick's Day

Please join me for a cup of Irish Tea and some quick and easy shamrock pretzel treats.  It's still a little chilly and damp here, so we will sit by the fire.

You can choose this Belleek teacup....

....or maybe you'd like this very old Johnson Bros Rolland teacup, which has Celtic knots?

My beloved mom gave this kissing leprechaun couple so many years ago.

My late beloved hubby posed by this knight in shining armor, when we were on our trip to Ireland in 2009, because he was my Knight!

I had the pleasure of keeping my two youngest granddaughters a week ago while my youngest son planted 146 shrubs/plants in his backyard.  Even little Hayden wanted a cup of tea in her "yellow" cup.

Harper loves projects and here she is making our easy pretzel treats. 

Didn't the shamrocks turn out so cute??  My friend, Joy, sent me a picture of these because she knows that I like to do fun things with my grands.  Thanks, Joy!   All you do is place the three pretzels and the stick pretzel together on parchment paper, place a Rolo in the center and put them in a 250 degree oven for 3-5 minutes.  Mine did better with 5 minutes.  When they come out, you place a green M&M in the middle and press to "glue" the pieces together.  You can then stick the tray in the freezer to harden quickly.

Easy Pilgrim Hat Treats

 The week before, Cissy texted me and said, "Can I start coming to your house again bc I don't have to cheer so I'm free?"  I wrote back and sad, "Of course you can my darling girl." She has been so busy with cheerleading and volleyball, but I was so happy to have her again.  She assembled these pilgrim hats treats with Keebler Fudge Stripe cookies, miniature Reese's Peanut Butter Cups, and "glued" together with frosting that she piped on.  We "glued" part of a candy corn for the buckle of the hat, but an M&M would work, too. 

 Before we began our treats, we enjoyed our favorite teatime together.  Cissy's favorite tea is Bigelow's Chai Vanilla tea, and she loves whipped cream on top!  Now, I do, too!!  She said to me, "See Nana, I taught you something", and I replied, "Yes, you did!"

 Here's Cissy's version of a good cup of tea!  She always chooses this cottage teacup, and one day I'll give it to her.

 I also was able to have lunch with my nine-year-old granddaughter, Ella.  I brought Chick-Fil-A to her, which is a favorite. 


My youngest son invited me to go to Harper's Thanksgiving program at her school, which I was happy to do.  

I'd like to wish each of you a very Happy Thanksgiving.  I know that I am counting my many blessings.

Patriotic Ice Cream Sandwiches

Please join me for treats inside today!  I was afraid that my ice cream sandwiches would melt if we went outside in our 90 degree day.


Caiden, who is going into 9th grade still wants to join in a Nana's Cooking Camp this summer, along with Cissy.  Didn't their cookies turn out so beautifully?


I think they like them, don't you?  I have to tell you that these are so delicious!!  This Nana likes them, too.

Harper didn't want to help with the baking, as she was too busy playing, but she did roll her ice cream sandwich in the sprinkles, and enjoyed eating it.

Patriotic Ice Cream Sandwiches

These are so good, and could be used with other flavors of cake mix, and ice creams. Since cake mixes are no longer 18.50 ounces, I buy an additional box to keep on hand to add to recipes. I have a scale and the kids get to weigh out the additional mix. 

ingredients:

  • 1 (15.25 ) box of red velvet cake mix + 3.25 ounces of additional cake mix  (I actually used white cake mix  to add, but chocolate would be good)
  • 2 eggs
  • 1 tablespoon water
  • 1/2 cup shortening
  • Ice cream of your choosing
  • Sprinkles of your choosing

instructions:

How to cook Patriotic Ice CreamSandwiches

  1. Preheat oven to 375 degrees.
  2. Combine cake mix, eggs, water, and shortening.  Mix with a mixer until well blended.
  3. Using a small scoop, scoop the dough, and shape with hands into a ball, trying to get uniform sizes.
  4. Place on parchment paper and bake for 8-10 minutes.  Cookies will flatten out as they bake and have a crackly appearance. 
  5. Remove from oven and let sit for about 5 minutes, and then remove the cookies to a cooling rack, and allow to cool thoroughly before filling with ice cream.
  6. Take scoops of ice cream and place on one cookie.  Place a second cookie on top, and try to squeeze together.
  7. Roll the edges of the ice cream into a bowl or plate of sprinkles.
  8. Wrap individually in wax paper or plastic wrap.  Store in a container, and freeze.

French Bread


Let's break bread together for tea time!  Isn't the potted rose plant that my neighbor gifted me for my birthday, so pretty?  The sweet cherub is hoping for Spring to arrive soon!


 

My friend, Colleen, gave me this March Royal Albert trio set, and I think it's such a pretty one.  


 I had four of my grandchildren over during Spring break and I was one  happy Nana!!! It was so nice to see these cousins together in my home.    We went to Chick-Fil-A for lunch, which is always a favorite. However,  before we went to lunch, we prepared the dough for the French Bread, and let is rise while we were gone.   Here they are rolling out their dough to make their twisted green and white St. Patrick's Day breads to take home. 

 Here are their finished loaves!   They took nibbles of their bread because it was hard to resist that warm bread from the oven, especially with Irish butter.

French Bread

This bread is a cinch to make because it's done in the food processor. I often use this recipe for pizza dough, or I'll use the French Bread for French Bread pizza. I hope you'll try it.

ingredients:

  • 1/2 cup warm water
  • 1 T. yeast
  • 1 T. sugar
  • 4 1/4 cup flour
  • 1 1/2 t. salt
  • 1 T. butter
  • 1 cup ice water

instructions:

  1. Mix sugar & warm water together in a small bowl. Sprinkle on the yeast & let proof for about 5 minutes.
  2. Put flour, salt & butter in food processor & mix with the plastic blade. Pour the warm water mixture down the food tube while running & let run until well mixed.
  3. While running, slowly pour the ice water down the tube & let the processor run (and knead) until the mixture balls up. After it balls up, let it run another 45 seconds.
  4. Put dough in a greased bowl, cover loosely & let rise several hours until it has quit rising. Punch down on a clean, dry counter & roll out into a rectangle about 12 x 16 inches. Now you can either cut it lengthwise into 2, for larger loaves, or 3 for baguette size loaves. You can also make 6-8 sub-style "hard" rolls. Cut 4-6 slits slits on the diagonal on the top. Cover & let rise until double.
  5. Preheat oven to 425 degrees. I usually moisten the top of the bread. If you want a very shiny crust, you can brush with a beaten egg white. You can sprinkle with sesame or poppy seeds, if you wish. Bake about 15-20 minutes, or until golden.
  6. Let cool on wire racks.
  7. Makes 2-3 large loaves, or 6-8 small loaves (these are great for meatball or Italian subs)

The kids also make bunnies from socks, which turned out so cute!  They love doing crafty things.  

 I had lunch with my daughter, and her three boys.  Cissy was busy with friends. 

I had my two youngest grands over for a Saturday visit.  Don't these sweet sisters look cute in their St. Patrick's Day outfits?

Easy Valentine Treat

 Our temperatures turned frigid here in the Dallas, Texas area, and we need to warm up by the fire!  My little vintage Valentine girl is hostessing our party today.  She feels right at home on top of this vintage designed tablecloth.


 Look at all these cute designs.  I made this tablecloth years ago, and fell in love with the fabric.


 My pretty teacup that I received a few years ago from Stephanie's teacup exchange feels perfect for today's vintage-inspired tea.

 Cissy and I made chocolate covered Oreos for a Valentine treat.   We used melted white almond bark (melts like a dream!), and pink candy melts (we had to add a little vegetable oil to thin) to dip the cookies into, and then immediately sprinkled them with Valentine sprinkles.  It's such an easy treat and her family loved them! 


I kept a few to munch on, too.  YUM!

M&M's™ Pudding Cookies

Does anyone still use a fiber optic tree?  I've had this one for years and years and just love it!  My Santa is one that my daughter gave me one year.  His appliqued outfit and embroidered mittens are so pretty.  Please join me for some cookies that Cissy and I made.  We will be having some Candy Cane Lane tea to go along with the cookies.

This is a Gracie bone china teacup that's dishwasher safe.


I cross stitched this piece several years ago.  




Yield: The recipe says 54, but Cissy and I made larger cookies, and got around 32
 

M&M's™ Pudding Cookies

These are soft cookies which would be fun to do for different holidays, using seasonal M&M's.

ingredients:

2 1/2 cups flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 cup butter, softened 
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 box (4-serving size)  vanilla instant pudding and pie filling mix
2 eggs 
1 teaspoon vanilla
2 cups green and red M&M's™ milk chocolate candies
1 cup white vanilla baking chips (we omitted)

instructions:

  • Heat oven to 350°F. In medium bowl, mix flour, baking soda and salt; set aside.
  • In large bowl, beat butter, granulated sugar and brown sugar with electric mixer on medium speed about 1 minute or until fluffy; scrape side of bowl. Beat in dry pudding mix. Beat in eggs, one at a time, just until smooth. Beat in vanilla. On low speed, gradually beat flour mixture into butter mixture until well blended. Stir in chocolate candies and white chips (if using) until blended.
  • Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheets, or parchment lined cookie sheets.
  • Bake 9 to 11 minutes or until light brown. Cool 2 minutes; remove from cookie sheets to cooling rack. Cool completely, about 15 minutes. Store in airtight container at room temperature.

I babysat my two youngest granddaughters overnight this past week , and Harper and I made Shortbread Spritz cookies.  She was so gentle in sprinkling the colored sugar onto the cookies.  She's her daddy's sous chef, and even helped make homemade pasta with him!


Hayden didn't get to help, but she sure enjoyed munching on a cookie!
