Summer's Last Aloha





It's an end of the summer Aloha on the patio! 

The Hawaiian Wedding Cake was a big hit at our Hawaiians themed  aqua friends party, and i saved a piece to have later.  




The moss ball was one that Molly gave me that had a different plant in it that eventually died, but I added a sprig of fern and it's done well.  I have to soak the moss ball for 5-10 minutes about every week.  The pineapple angel is one that wass gifted to me years ago from a friend.




Pineapple Iced tea is in my goblet, and it was very tasty.  

These are some of the 26 ladies that were at our party.  We sure have a wonderful array of foods and it's fun to see how everyone dresses for the occasion.

Hawaiian Wedding Cake

I made this cake for our Aqua ladies Hawaiian themed party, and it was a hit!

Ingredients

  • 1 package yellow cake mix
  • 2 (20-ounce) cans crushed pineapple, drained (do not drain until it's bone dry, but save the juice to used in place of water in the cake)
  • 1 (3.4 ounce) package instant vanilla pudding mix
  • 1 (8-ounce) package cream cheese
  • 1 (8-ounce) container frozen whipped topping, thawed
  • ½ cup flaked coconut (I used about 1 cup, and toasted it)
  • ½ cup chopped walnuts ( I omitted )
  • ½ (10-ounce) jar maraschino cherries (I omitted )

Instructions

  1. Prepare and bake cake mix according to package directions, but using the saved pineapple juice in place of water in the directions, in a 9 x 13" pan. Remove from oven and allow to cool. I poked holes every couple of inches in the cake with the end of a wooden spoon, and then spread drained pineapple on top of cooled cake. This made the cake very moist.
  2. Prepare pudding as instructed on package, except I used 1-1/2 cups of milk instead of 2 cups, and set aside. In a medium bowl, beat cream cheese until smooth; mix in prepared pudding. Fold in whipped topping. Spread evenly over pineapple.
  3. Sprinkle top with coconut, chopped walnuts, and maraschino cherries, if using. Store in refrigerator until ready to serve.

Notes

Toasting the coconut made it extra delicious.






My son, Tim, celebrated his birthday this past week, and Mike and I were invited for dinner.  I brought his favorite strawberry pie that he requested.  He and his family went to NYC and saw Hamilton and went to the Harry Styles concert and had a great time.  Avery flew in from college in  Arkansas to meet up with them.

  4. Yummy looking cake Kitty...another recipe for my file. What a wonderful time you have had with family birthdays, etc and the Hawaiian themed aqua party looks fabulous. Refreshing time on the patio today..pineapple anything is always good in my book. The pineapple angel is so sweet...I collect those Willow Tree dolls, altho I haven't had an addition for awhile...it is definitely time to check out newer ones.
