This darling bee tablecloth was sent to me from a friend, and I love it. The Bee Happy plates are from Dollar Tree, and aren't they the cutest?

Tea today to go along with the Honey Scotcheroos is Twinings Honey & Vanilla. You can have either this pretty Grace's Teaware teacup .....
....or this Bee Day teacup. The napkins go along with my gardening/bee theme.
Kristen and Kevin gave me this pretty Honeypot Luminary from Colorado, along with the honey that I used in the recipe.
Yield: depends on the cut, but I got 48
Honey Scotcheroos
The original recipe for Scotcheroos called for corn syrup, but I had extra honey and wanted to try it in place. They turned out really good!
Ingredients
- 3/4 cup honey
- 3/4 cup sugar
- 1 cup creamy peanut butter
- 6 cups Rice Krispies
- 11 ounces milk or semi-sweet chocolate chips
- 11 ounces butterscotch chips
- 1 tablespoon vegetable oil, coconut oil or butter
- Flaky sea salt, optional
Instructions
- In a large saucepan or dutch oven, add the honey and sugar, and heat, stirring frequently over medium heat until sugar dissolves and comes to a simmer. Remove from heat, and add the peanut butter and mix well. Add the Rice Krispies and stir until the cereal is well coated. Press the mixture into a 13x9" sprayed or parchment lined pan. The parchment makes it easy to lift out and cut into bars.
- Melt the chocolate and butterscotch chips with the tablespoon of oil in the microwave at 30 second intervals, stirring in between until the mixture is melted. Spread evenly over the cereal mixture. Sprinkle on the flaky sea salt, if desired. Let stand until firm, or put in the fridge to help them set up. Cut into whatever size bars you like.
Notes
Don't pack down the cereal mixture too much, as you want the bars to be nice and chewy.
I used a mixture of milk and semi-sweet chocolate chips.
Granddaughter Avery and her boyfriend are counselors at a Christian camp this summer.
Grandson Caiden was in a race this past weekend, and he's with his fiancee', Elizabeth.
I was excited to see this baby woodpecker that's been making an appearance everyday!

What a joyful teatime, Kitty! I love all your bee themed items. I bought the dinner plates at DT that go with your salads. Love, love, love the tablecloth, and I would love to use the Grace's teaware cup. What a great substitute for the corn syrup, using your gifted honey. The recipe sounds wonderful. I hope you're relishing all these days in the garden before the TX heat and humidity are long-lasting. The woodpecker baby is a bonus sighting! How can anyone go wrong with Scotcheroos?? One of my favs for sure. How wonderful Avery gets to experience being a counselor this summer. Lovely pic of Caiden and his intended. We have a few baby grackles in the yard and boy are they vocal...especially at 3am! I wonder who is worse, vocal babies or pecking babies!! Haha!! It's a good thing those babies are cute! xo

Your darling bee teapot is so darn adorable. I need to see if our Dollar Tree has those Bee Happy plates. They are darling. I love scotcheroos, and using honey is so much better than corn syrup. Brilliant!
