Bee Happy for Honey Scotcheroos



It's time to Bee Happy! 

This darling bee tablecloth was sent to me from a friend, and I love it.  The Bee Happy plates are from Dollar Tree, and aren't they the cutest?




This summertime bee teapot is one of my favorites!


Tea today to go along with the Honey Scotcheroos is Twinings Honey & Vanilla.  You can have either this pretty Grace's Teaware teacup .....

Kristen and Kevin gave me this pretty Honeypot Luminary from Colorado, along with the honey that I used in the recipe.

Honey Scotcheroos

Honey Scotcheroos

The original recipe for Scotcheroos called for corn syrup, but I had extra honey and wanted to try it in place. They turned out really good!

Ingredients

  • 3/4 cup honey
  • 3/4 cup sugar
  • 1 cup creamy peanut butter
  • 6 cups Rice Krispies
  • 11 ounces milk or semi-sweet chocolate chips
  • 11 ounces butterscotch chips
  • 1 tablespoon vegetable oil, coconut oil or butter
  • Flaky sea salt, optional

Instructions

  1. In a large saucepan or dutch oven, add the honey and sugar, and heat, stirring frequently over medium heat until sugar dissolves and comes to a simmer. Remove from heat, and add the peanut butter and mix well. Add the Rice Krispies and stir until the cereal is well coated. Press the mixture into a 13x9" sprayed or parchment lined pan. The parchment makes it easy to lift out and cut into bars.
  2. Melt the chocolate and butterscotch chips with the tablespoon of oil in the microwave at 30 second intervals, stirring in between until the mixture is melted. Spread evenly over the cereal mixture. Sprinkle on the flaky sea salt, if desired. Let stand until firm, or put in the fridge to help them set up. Cut into whatever size bars you like.

Notes

Don't pack down the cereal mixture too much, as you want the bars to be nice and chewy.

I used a mixture of milk and semi-sweet chocolate chips.




Grandson Caiden was in a race this past weekend, and he's with his fiancee', Elizabeth.


I was excited to see this baby woodpecker that's been making an appearance everyday!
