A Flop of a Cookie but a Winner of a Chicken Dinner

Yes, these cookies were a flop, but they still tasted good!

I will not share the recipe, but I did do a review of them on the Hershey's site.  I will also call them because bags of Heath English Toffee Bits are not cheap these days.  The Toffee Bits Chocolate Cookies turned out so flat, and I followed the recipe perfectly. I thought they were going to taste like Heath Bars in a soft cookie form.   However, I looked up the reviews afterwards and it seems mine weren't the only ones that were a flop.  My tea party after all of our rain turned out pretty though, by using my first Big Star quilt that I made years ago.

The Almond Sugar Cookie tea was really delicious in my Copeland Hazel Dell teacup that a friend sent me years ago.

My alstroemeria are still thriving.  These are the best long lasting flowers for me, and my lady vase looks quite dapper with her happy flowers.

I am sharing a recipe that our blogging friend Jenna,  who passed away several months ago, had shared on her blog  The Painted Apron.  Jenna always had something tasty going on and she had such quick and easy recipes.  She was also such a gifted artist.  She would be happy that I'm sharing this recipe that I've made for several years now. I remember telling her how much I loved this easy recipe.

Yield: 4
Author: Kitty, but recipe is adapted from Jenna who blogged at The Painted Apron
Hoisin Chicken

Hoisin Chicken

This 3 ingredient wonderful recipe from Jenna can be made in the slow cooker or on the grill. I've done it both ways and they're both great. I'm making half the recipe, but feel free to double the recipe, because you might want extras!

Ingredients

  • 4 boneless chicken thighs (I used skinless)
  • half a bottle of Hoisin Sauce
  • half a bottle of Sweet Chili Sauce

Instructions

  1. Grilled Chicken Version
  2. Put chicken in a zip lock bag or a bowl.
  3. Pour 2 tablespoons of each of the sauces into a cup and set aside in the fridge for later.
  4. Pour remaining sauces over the chicken and toss until coated. Refrigerate for 6 hours.
  5. Grill chicken over medium heat for 20 minutes, basting during the last few minutes with the reserved sauce.
  6. Slow Cooker Version
  7. Place the chicken in a sprayed or lined slow cooker and pour sauces over them.
  8. Cook on low for 6 hours or on high for 3 hours
  9. Finish chicken under the broiler for several minutes to char and crisp the the outside, if desired. Make sure you keep an eye on the broiler.

Notes

Just make sure to use equal amounts of the two sauces, if you think half a bottle of each is too much.

I was privileged to be part of a group of ladies that met at Feed My Starving Children, which is a nonprofit organization that uses volunteers to pack meals for the malnourished to more than 70 countries. This nonprofit does this 6 days a week from morning until 9:00 pm, doing different shift of volunteers throughout the day.  The staff makes it really fun by providing great music, and contests between the tables of workers.  At the end, if we choose, we pray as a group for the people that will be helped.  There was about 150 people at our particular shift.

My darling daughter had bought tickets for us to attend the McKinney, TX Home and Garden Tour that we went to this past weekend.  This was our first stop at the beautiful community gardens that are behind the Community Garden Kitchen, that serves nutritious meals to anyone in need in a restaurant-like setting.  They serve meals Monday-Thursday, and they use the fresh produce that is grown in the gardens.

Thank you for your visit!  xo

  2. Well, the chicken sounds awesome even if the cookies weren't. Love the picture of you & Molly. The volunteer time sounds like it was fun. Wish we had some rain. It's been dry for more than a week here, and getting hotter. Have a great new week, Kitty.

  6. Kitty, I am not a bit surprised at your volunteer work for the needy...you are such a sweet, kind hearted person...one I would call a care giver if choosing just one of the gifts God gives us. Thank you for posting a 'Jenna" recipe. You are right she would have been thrilled you used her recipe for chicken and it looks wonderful. She always had such creative recipes and I pray for her son and grands...they have to miss her terribly. I wonder if they kept the beach property...they all loved to go there and Jenna posted some fabulous recipes from there. How sweet of your daughter to provide a day of fun at McKinley Gardens...the apple doesn't fall far from the tree. Hugs and much love
