Strawberry Cream Pie


 

Did you know that May 21st was National Strawberries and Cream Day? 

It's also International Tea Day, so I am covered!  I made a Strawberry Cream Pie to enjoy on my patio.  I covered the pie with tulle to keep the bugs away.   The tulle has strawberry buttons that I put on the corners to weight it down.

 

My dear friend, Bernideen, from Bernideen's Tea Time, Cottage and Garden Blog sent four of these darling strawberry napkins to me, because she said, "They look like they have your name on them!"  Wasn't that thoughtful and so generous of her?  I love them so much!  Thank you, Bernideen!


I had to use one of my favorite strawberry teacups for the occasion, which is Johnson Bros Strawberry Fair.  My cup is holding Adagio's Berry Creme Compote, which is an herbal tea.  I'm usually not fond of herbal teas, but this one is good, and I like it  iced, too, and it's a beautiful color.

My youngest son gave me this floral arrangement for belated Mother's Day.  It was so pretty when I first received it with beautiful peonies, ruffled tulips, ranunculus, Lenten roses, and other flowers.   On my drive home from their house, the peonies completely opened up.

Strawberry Cream Pie

Strawberry Cream Pie

This pie is so creamy, light and fluffy!

Ingredients

  • 8 ounces cream cheese, softened
  • 8 ounces frozen whipped topping, thawed
  • 1/2 cup sugar (or Splenda)
  • 1 cup chopped fresh strawberries; washed, tops removed and then coarsely chopped
  • 1-2 teaspoons vanilla
  • 1 graham cracker crust
  • strawberry preserves for garnishing, if desired

Instructions

  1. Place the cream cheese, sugar and vanilla in a large bowl and beat with an electric mixer until light and fluffy.
  2. Add the chopped strawberries to the bowl and beat again. Add the whipped topping and beat until smooth and creamy.
  3. Spoon the filling into the pie crust. Cover and refrigerate for several hours or wrap well and freeze for up to a month.
  4. To garnish, spoon some strawberry preserves that has been heated in the microwave just until warm, and spoon a little over each slice.

Notes

I think this would be good just spooned into dessert dishes, and forget the crust.

If you don't use this pie in a day or two, it should be frozen, as the strawberries start to weep.



My youngest granddaughter, Hayden, graduated from preschool this past week.  What a fun event that was to see all these happy faces receiving their diplomas!  Hayden's color that she was to wear was red and she had her mom put red chalk paint in her ponytail that morning. Each child was talked about by their teacher and she told what each of them wanted to be when they grew up.  Hayden wants to be a "cooker and a nail and hairstyle worker!"  

 


My oldest granddaughter, Avery, turned 16 this past week.  Isn't she a beauty?  Avery is smart, personable (she can talk to anyone), and excels at volleyball, and is captain on both her school team and club team.    


 

Look who came home for a 15 day visit??  Here's Riley with my daughter's family's new puppy, Tucker, a golden retriever.  They recently had to put their dog, Buddy, down after he was bit by a brown recluse spider.  I got to see Riley and go out to lunch with all of them at a Mexican restaurant.  Riley has been working in an army hospital in San Antonio, caring for those who are unable to care for themselves.  He's such a kind, gentle soul, who anyone would be grateful to have care for them.

I've never seen that JB Strawberry Fair before, so pretty and perfect to enjoy your tea with a slice of pie. That Hayden is adorable and Avery is such a pretty young woman! I know everyone is glad to have Riley home for a visit, such good work he is doing. I've never heard of a dog bitten by a brown recluse spider...I'm so sorry. :( What fun to have a new puppy though.   14. I love this week's post, Kitty! The strawberry creme pie looks fabulous (we have Shoney's Big Boy original restaurant here, and their strawberry pie was always a favorite!). What a sweet gift from Bernadeen, and is that tatted edging?! On the family side, your bouquet is gorgeous, and Hayden's career choice(s) sound like she knows what she wants, given she already has her mom putting chalk paint in her hair. 🤣Avery is a true beauty (love those dimples), and Riley's assignment close to home makes for a mother's (and grandmother's) thankful heart. So sorry about Buddy, but Tucker looks eager to fill the family with puppy love.❣️🐾
