Saltine Cracker Toffee


One of my friends was talking about this cracker toffee last week. I have seen it on Pinterest, but I have a signed copy of Trish Yearwood's cookbook that a person that worked with my late hubby gave to me.  In it was the recipe for this toffee and I have always wanted to make it. 

I  received four of these pretty Christmas tree napkins at a luncheon gift exchange.

My sweet friend, Janne, gave me this favorite teacup last year.  


My daughter and I used to exchange Santas years ago.  Isn't this baking Santa a cute one?

Saltine Cracker Toffee

Saltine Cracker Toffee

In Trisha's cookbook, she calls this Sweet and Saltines. Be forewarned that this candy is REALLY addictive!

Ingredients

  • 40 saltine crackers
  • 1 cup (2 sticks) butter (I used unsalted, and only 1 stick)
  • 1 cup light brown sugar
  • 8 ounces (about 1 and 1/3 cups) semi-sweet chocolate chips (I used milk chocolate chips)

Instructions

  1. Preheat oven to 425 degrees.
  2. Line a large jelly roll pan with aluminum foil and the saltine crackers.
  3. In a medium saucepan, melt the butter and brown sugar together and bring to a boil. Boil for 5 minutes. Remove from heat and pour over the crackers, covering them evenly.
  4. Put the jellyroll pan into the oven and watch closely, and bake for 4-5 minutes, or until just bubbly.
  5. Remove from the oven and pour the chocolate chips over the crackers. When the chips melt a bit, spread them over the crackers with a knife.
  6. Transfer the pan to the freezer for 15-20 minutes or until completely cold.
  7. Break up into pieces. Store in airtight container. I think they are best left in the fridge until needed to stay crispy.

Notes

Trisha suggested to use one stick of butter for a crunchier cracker, and that's what I did.

I sprinkled some Christmas sprinkles on top, but finely chopped nuts or Heath bits would be good, too.



My two youngest granddaughters were in a Christmas dance performance.  It was so festive and certainly put me in the Christmas spirit.  Harper is in the top and she's on the left, in a lyrical dance to Oh Holy Night.  She was also in a ballet, dancing to Skating.  Hayden is the third from the left in the bottom picture, dancing to We Are Santa's Elves.  The girls had to leave their costumes backstage, and Kristen and I were waiting for my son, Kevin, to get the car (it was a long walk on SMU's campus).

  6. Oh, how I love this, Kitty! Seeing the girls dancing must've been so fun! Harper especially looked in dance character in her lyricial movement ❤️. Hayden seems to be playfully into her part.

We just made some this past week too; but this time I added 1 cup of peanut butter into the chocolate chips (I melted them before spreading them on the crackers; something I've never done before but we're trying to branch out after seeing a few different tweaks to this recipe online). This week we're attempting a s'mores version! We're going to have to try making it with just 1 stick of butter one time too.

  11. I've been making these for at least 25 years - they are always a HUGE hit. They are so perfectly crunchy/chewy/salty/sweet :-) If you haven't heard of them before, look up Frito Bars too - another easy recipe that everyone loves. I love your baking Santa too <3

  14. One of my favorite recipes - first time I ever had it was my little sister's roommate's mom's recipes. We call it Dayna's Toffee - we lost her many years ago to breast cancer. She was a sister to us and is missed ALL the time, even all these years later. It is honestly one of my very favorite treats - all the goodness in one bite!

    The Christmas show sounds wonderful - bet they did a great job!

    I've never heard of Saltine Cracker Toffee. The directions seem so simple, and the ingredients are everything one would already have in the pantry! Enjoy!!!

  23. I love Santa's too and yours is very Jolly and a baker too! I've always wanted to try the saltine cracker toffee also. It looks delicious! We have no dancing grandsons but I do miss those recitals! At least we got to see two of them sing at the Christmas concert last week :) Merry Christmas, Kitty! ♥
