Toffee Bars


I hope all of my friends had a wonderful Thanksgiving, and now onto Christmas! Isn't it fun to bring out the treasured decorations?  You've seen my Big Star quilt, but it's so cheery and goes so beautifully with my dishes of years gone past.


I still love sipping tea from this pretty mug.


It's always nice to bring out a Susan Branch book.


My teapot was from a gift exchange and my darling salt and pepper shakers are just for decor, and belonged to my little Mom.  They have the sweetest vintage faces.


My friend, Ann, sent me a copy of her Toffee Square recipe and they are so good!  Ann lines the pan with parchment paper for ease of lifting and cutting them in rectangles of 8.  Ann then wraps each rectangle, then freezes them, and pulls them out as needed, and then cuts into squares, or bars, in my case. 


Yield: 6-7 doz.

Toffee Bars

Toffee Bars

These are yummy, buttery bars. The hardest part is patting the dough into the pan.

Ingredients

  • 1 cup butter
  • 1 cup packed brown sugar
  • 1 egg yolk
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1/4 teaspoon salt
  • 3-4 milk chocolate bars (7/8 oz. each) (I used chocolate chips)
  • 1/2 cup chopped nuts (I used Heath Toffee Bits)

Instructions

  1. Heat oven to 350 degrees.
  2. Line a 9 x 13" pan with parchment paper.
  3. Cream butter, sugar, yolk and vanilla. Stir in flour and salt until blended. Pat the dough into the prepared pan. Bake 20-25 minutes, or until nicely browned. It will be soft.
  4. Immediately place the separated squares of chocolate (or chocolate chips) onto the top. Let stand until soft; spread evenly over the surface. Sprinkle with nuts, or toffee bits. When cool, lift from the pan and cut into 8 rectangles, if desired, and wrap and freeze until needed. You can also cut while warm.

Notes

A sprinkle of flaky sea salt would be excellent on top of these!


 I went to my daughter's and son-in-law's for Thanksgiving for a fabulous meal!  I don't know how Molly does all that she does!  It was so funny that we both were wearing the same colors.

  3. I thought at first the toffee bars were the candy, until you described cutting them, lol. Those sound delicious too, just like the candy. I love seeing the Christmas decor come out! And Kitty, you're the tiny one now among your beloved family. Soon even Hayden and her sister will catch up to you!

I know you're glad Molly's family is close by. Cissy and Caiden are growing up so quickly...it seems like yesterday when Cissy was helping you in the kitchen. :) Happy Monday ♥

    Re: coordinated outfits - great minds think alike! At the office, we have a "wall of same" which features photos of co-workers who show up in matching outfits (unplanned). I made it on the wall--with the same co-worker--a couple of times.

Love the photos too...I noticed right away you and Molly were matching...how fun, especially when you don't plan it.   8. How pretty all of your treasured decorations are. So glad you had a good Thanksgiving with your beautiful family. Your toffee bar recipe is identical to one I have, but I've never thought of putting toffee pieces on in place of the nuts. That sounds delicious!

  9. Aw, it was so nice to see your Thanksgiving photos! And these bars look amazing! I just made some brownies for Kevin & Zach & I put heath pieces in them. It was so strange because when I first took them out of the oven, they had melded into the brownies and could hardly be noticed. But then, after the brownies cooled, they somehow hardened back and were identifiable. My dear boys loved them! God bless you with a wonderful Christmas season, sweet friend.

  11. These toffee bars sound wonderful! Anything with chocolate and nuts is a hit with me. Love the photo of your family and matching outfits :) My daughters and I have done the same on occasion. Thank you so much for the Thanksgiving wishes! Our Thanksgiving celebration at our daughter's home had to be cancelled because of Covid, sadly. She got sick the day before Thanksgiving, her husband the day after and the middle grandson the day after that! Then the oldest grandson just tested positive a few days ago. Looking forward to a healthy Christmas, hopefully! ♥
