Scalloped Potatoes and Ham


My daughter sent me home with the ham bone from Easter. I've been using the meat from the ham all week, and made my favorite scalloped potato recipe and added some ham.  The Royal Doulton figurine was one that my beloved mom gave to me from her collection that my dad started for her. 

 

My grandson, Riley went to his Senior Prom with his girlfriend, Bayleigh, and my darling daughter always invites me over to share in the joy.  Aren't they so cute together?

My daughter wanted a picture of us kissing Riley, and we had to sit down because he's so tall that we couldn't reach him!

Scalloped Potatoes and Ham

Scalloped Potatoes and Ham

This recipe makes the best scalloped potatoes, and adding leftover ham, makes it a main dish.

Ingredients

  • 2 cups milk
  • 3 cloves garlic, smashed and peeled
  • salt
  • 3 lbs. baking potatoes, peeled and sliced 1/4" thick
  • 1-1/2 cups grated cheese (can use Gruyere, but I used Mexican Blend)
  • pinch cayenne
  • 2 cups chopped leftover ham
  • black pepper
  • 1 cup heavy cream

Instructions

  1. Preheat oven to 375 degrees.
  2. Butter a 9 x 13" baking dish.
  3. In a large saucepan, combine 2 cups water with the milk, garlic, and 1/2 teaspoon salt. Add the potatoes, and bring to a boil over medium-high heat, stirring occasionally to prevent the potatoes from sticking to the bottom of the pan. Reduce the heat to medium and simmer until the potatoes are tender, but still slightly firm, about 8 minutes.
  4. Remove the saucepan from the heat, and with a slotted spoon, transfer half of the potatoes to the baking dish, arranging them in an even layer. Add half of the ham on top of the potatoes. Sprinkle with half of the cheese and the cayenne; season with salt and pepper to taste. Repeat with the remaining potatoes and ham, and sprinkle with the remaining cheese. Pour the heavy cream evenly over the top. Bake for 40-45 minutes until the scalloped potatoes are golden brown. Let stand 5 minutes before serving.

Notes

Rachael Ray only used 3/4 cup of grated cheese, but I doubled the amount.

  4. So sweet Kitty! I love the photo of you and Molly kissing Riley. He is so tall and handsome too. I took a similar photo of my hubby and his brother kissing my MIL at a family wedding 25+ years ago and it's still one of my favorites of her. Molly is so photogenic! Your scalloped potatoes look delicious! We always fought over who got to take the ham bone home after Easter to make soup with. :) Happy Monday. ♥

  6. Awl Kitty - yes yes yes they are adorable together and he is soooo handsome! And wow is he tall - you look like you hail from Lilluput standing next to him. His gf is lovely - and her flowers - wow! Hope they had a wonderful time together.

    Your taters n ham - yummmm- we did brunch this year, and for the first time in my life I didn't have a ham for Easter. Was weird. But the brunch thing was super fun, too, something different.

    Scalloped potatoes are my very favourite way to eat that vegetable, and combine with ham - it's a perfect dish!

Great meal, it's nice you can use the ham bone for so many meals, especially with the cost of groceries these days. Wow, your grandson is really tall and yes, very handsome. And, your daughter is so lovely. How special you are to your family to be included in "special moments." I wish mine didn't live so far away.

  18. Oh, these potatoes look so good! I have some leftover ham that I cut into chunks and froze, and this would be a perfect use for it! I can't believe how tall Riley is! Wow! God bless you, sweet friend.:)
