It's Spring at last and I'm having a tea party to celebrate! My daughter gave me this pretty towel for Christmas that I'm using for my tea table. My sister sent me the candle ring that's being used to hold my beautiful teapot.
My sister also sent me this darling Royal Albert Country Scenes Dingle Dell teacup. Isn't it pretty for Springtime?
Mary from Home Is Where The Boat Is sent me this wonderful glass teapot and flowering teas. Mary is so thoughtful and generous, and has the most beautiful blog. The teapot can actually be used to heat water on the stove top, and it also has an infuser for loose leaf tea.
I chose to use the Rising Spring flowering tea for today. Can you see the little pod in the teapot?
It takes between 5-10 minutes for the pod to unfurl in the teapot. Doesn't it look pretty? Thank you so much, Mary!
Here's my cake, after it came out of the oven.

Mixed Berry Cake
This easy cake doesn't require an electric mixer. It's very tart and is perfect with a scoop of vanilla ice cream or whipped cream.
Ingredients
- 1 1/3 cups Gold Medal™ all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/8 teaspoon salt
- 3/4 cup sugar + 1 teaspoon of sugar or sparkling sugar for sprinkling on top
- 1 teaspoon vanilla
- 1 1/2 cups fresh mixed berries, such as blueberries, raspberries, blackberries, and coarsely chopped strawberries (whatever your preference)
- Sweetened whipped cream or ice cream, if desired
Instructions
- Heat oven to 350 degrees. Spray 9-inch glass pie plate with cooking spray. In small bowl, mix flour, baking powder, baking soda and salt; set aside.
- In large bowl, beat 3/4 cup sugar, the melted butter and sour cream with whisk until well blended. Beat in egg and vanilla. Stir in flour mixture until smooth. Stir in 1 cup of the berries. Spread batter in pie plate. Sprinkle remaining 1/2 cup berries and 1 teaspoon sugar over top.
- Bake 40 to 45 minutes or until toothpick inserted in center comes out clean. Cool 20 minutes. Cut into wedges; serve with whipped cream, or ice cream.
