Impossible Chicken and Broccoli Pie



I needed something quick to have to eat before I left for Tennessee.

My beloved late husband's older brother died this past week, and my daughter and I flew to Tennessee to be with our family, and to offer our support and comfort.   Marty had been on dialysis for two years, and actually died of an aneurysm and sepis, but also had renal failure.  


I used this pretty teapot that my sister gave me.


I also used my beautiful Shelly teacup, which looks so pretty with my heart shaped plates that my son bought at a garage sale, of which I have six.  


I love these plates and use them so often.  They say "handcrafted in Hungary" on the back.


Molly and I enjoyed a cup of tea together at our hotel.  It was bitter cold when we arrived in Tennessee and we needed the warmth. 


These are the daughters of my hubby's brothers.  On the left is Jaime, daughter of my youngest brother-in-law; center is Mandy, the daughter of my hubby's oldest brother, and who was such a wonderful caregiver to her Dad, and gave the most heartfelt speech;  next is Molly, my daughter.

Impossible Chicken and Broccoli Pie

Impossible Chicken and Broccoli Pie

These impossible pies are so easy and so tasty.

Ingredients

  • 2 cups Frozen Broccoli Cuts, thawed, drained and chopped
  • 1 1/2 cups shredded Cheddar cheese
  • 1 cup cut-up cooked chicken
  • 1 medium onion, chopped (I used a teaspoon of dried minced onion)
  • 1/2 cup Bisquick
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 eggs
  • 3 slices of cooked bacon, crumbled, optional

Instructions

  1. Heat oven to 400 degrees. Spray a 9-inch glass pie plate with cooking spray. 
  2. Sprinkle broccoli, 1 cup of the cheese, the chicken and onion in pie plate. In medium bowl, stir remaining ingredients with wire whisk or fork until blended. Pour into pie plate. 
  3. Bake 35 to 38 minutes or until knife inserted in center comes out clean. Sprinkle with remaining 1/2 cup cheese. Bake 1 to 2 minutes longer or until cheese is melted. Let stand 5 minutes before serving.

  1. I am so sorry for the loss of your dear brother-in-law, Kitty. It sounds as if he had many challenges to face these last couple of years. A lovely photo of the three girls, and of you and your daughter, Molly. Those heart shaped plates were a lucky find, and as for the Shelley teacup is so very sweet.

I was so sorry to hear about the passing of Rich's brother. So glad you were able to travel with Molly and be with family to celebrate his life. We've had the same below average freezing temps...brrrr! Hope you're warm now that you're home. ♥

  3. The sweet little owl teapot is adorable Kitty. It looks so pretty used with the teacup and saucer and heart plates. I am sorry for your loss. I am sure it was a comfort to your family for you and your daughter to go to TN to be with your family. It has been so cold here this month Stay warm..........

  6. I am so sorry to hear of your loss! So thankful you and Molly had safe travels and got to go together. It's funny you mentioned the chicken broccoli pie! I have some chicken breasts that I cooked and froze for future use that I was thinking about adding to a broccoli casserole that I make. I tried adding the chicken once before, and my family liked it real well. So, I think I may do that either today or tomorrow. Your post gave me the extra nudge! Looks like you have some wonderful nieces and I'm certain they enjoyed seeing you and Molly. I can see some family resemblances :) A delicious, comforting meal you made before your trip.     I'm admiring the pretty Shelley teacup and handcrafted Hungarian heart plate. The checkered pattern reminds me of MacKenzie-Childs.

  21. Oh Kitty, I'm sorry for your loss and glad you were able to go and be with family. This pie looks like perfect comfort food and I don't think I've ever made one of the famous Bisquick impossible pies, must try!
