Cowboy Cookies


 Let's have some tea and cowboy cookies today, shall we?  The burr acorns were found on a walk in a park in my neighborhood. 


 My Late Great Aunt Kitty painted this turkey when I was a teenager, when she came to visit at my parent's home for Thanksgiving.


 I so love brown transferware in the Fall.  This pretty plate is called Bountiful, by Myott, Son & Co.  


 My teacup is called Callico.  I like how the plate and teacup mix and match together.  




yield: 3 dozen large, or 6 dozen small cookiesprint recipe

Cowboy Cookies

This is a flavorful, chewy cookie, and adapted from Laura Bush's recipe. The recipe is for the full amount, but I cut it down to a third, shaped the balls of cookie dough, and froze them. You can bake the frozen dough on parchment paper, just allowing a little extra baking time.

INGREDIENTS:

  • 3 cups flour
  • 1 T. baking powder
  • 1 T. baking soda
  • 1 T. cinnamon
  • 1 t. salt
  • 1 and 1/2 cups butter (3 sticks), at room temperature
  • 1 and 1/2 cups sugar
  • 1 and 1/2 cups brown sugar, packed
  • 3 eggs
  • 1 T. vanilla
  • 3 cups semi-sweet chocolate chips
  • 3 cups old-fashioned oats
  • 2 cups coconut
  • 2 cups. chopped pecans

INSTRUCTIONS:

  1. Sift together the flour, baking powder, baking soda, cinnamon and salt. Set aside.
  2. In a large mixing bowl, beat butter, and then gradually add the sugars to the butter, and beat about 2 minutes.
  3. Add the eggs, one at a time to the butter mixture, and then beat in vanilla.
  4. Add the flour mixture that was set aside, and stir just until combined.
  5. Add the semi-sweet chocolate chips, the oats, coconut and pecans.
  6. Bake at 350 degrees for 17-20 minutes, if using a 1/4 cupful, or 13-15 minutes for 2 Tablespoons full.

  6. Kitty I too love brown transferware patterns. Love your plate and tea cup and saucer. I noticed your pillow on your couch with the pumpkin (cross stitch) and then finished off with a (quilting) border. I always love to see your craft projects. Your cookies sound delicious and it may be something I try to make myself soon. The painted Turkey is perfect to display for Thanksgiving and such a cherished gift to you.

  7. I love your Great Aunt Kitty's turkey! There used to be a woman at my office who liked turkeys so I'd pick up turkey figurines (e.g., candle holders, salt and pepper shakers, etc.) for her when I was treasure hunting. I'm also admiring your brown calico teacup. So pretty!

I just saw a recipe for Cowboy Cookies on Pinterest this weekend. I've never heard the name before, and here you have provided a recipe too. Looks like it makes lots ... 3 cups chocolate chips!! ... I'm there ;)

  15. Oh boy, Kitty, I want those cookies - pinning! It goes without saying (but I'll say it anyway) that I love your brown transferware! That floral basket was a very popular pattern in the early 20s, and I've seen it on everything from vintage handbags and compacts to linens, to tableware. I just recently (and happily) scored a few plates myself. =)

    I love all your Thanksgiving/fall decorative items and I LOVE that teacup! Now that cookie recipe sounds very delicious--I mean how could you go wrong with all of those ingredients!     The cookie recipe looks very similar to the one my Mom always used except she did walnuts instead of pecans. Oh & no coconut...some siblings didn't care for it. I shall make some this Christmas!

  35. Kitty, I got some of the burr acorns free from a local pumpkin stand in October. I had never seen that kind of an acorn before. I think they are so cute! I love brown transferware for fall too. I've been lucky to find a few pieces at the thrifts now and then. Your recipe sounds like it might be the same as what some call Ranger cookies. I love them and have wanted to try making them.
