Overnight Cream Cheese Stuffed French Toast

Yes, it's still quite warm here in Texas and tea is outside.  How about joining me for some stuffed french toast?  I love sandwiching a pretty doily in between two clear glass plates for a pretty effect.

I'm using my Royal Vale cottage teacup.  I'm not ready to head into Fall quite yet.  It's hard with the temperatures still so hot here in Texas.



 This recipe was recently in The Dallas Morning News.  One of my grandsons, who loves to cook, helped me make this.  We put it together the night before and enjoyed it the next morning.  

1 8-ounce pkg. reduced- fat cream cheese
3 T. sugar
1 t. vanilla (my addition)
8 slices cinnamon-swirl bread (I used Pepperidge Farm)
1/2 cup chopped pecans
4 eggs
1/2 cup milk
Assorted fresh berries ( The Dallas Morning News suggested sauteed apples slices or fresh peaches)
Syrup

MIX reduced-fat cream cheese, vanilla and sugar until blended; spread onto bread. Place 4 bread slices, cream cheese-sides up, in 8-inch square baking dish sprayed with cooking spray. Sprinkle with chopped pecans. Cover with remaining bread slices, cream cheese-sides down.
 
WHISK eggs and milk until blended; pour over bread. Cover; refrigerate overnight.
 
HEAT oven to 350 degrees.   Bake, uncovered, 30 to 35 min. or until center is set and top is lightly browned. Serve topped with berries and syrup, if desired.

Serves 4-8, depending on portion size.

  6. Yummy! I love overnight French toast and yours sounds delish! Love your pretty cottage teacup too. I'm not ready for Autumn either. The weather is cooling off but I'm going to enjoy Summer for as long as I can. We have a long winter ahead of us here on the east coast.   8. This sounds so yummy! My grandson has been here for almost a week and has been doing some of the cooking so I know how much fun you had with yours. Shaun made some of the best tomatillo salsa and pickled onions I have ever had.

  18. Oh, good heavens...talk about decadent!!!! I'm pretty sure I just popped a hole in my Spanx just looking at that French toast!!! :-)

    Still awfully warm here, too, but expecting cooler temps in the coming days. Thank the Lord! I'm ready to back off of the heat and humidity!

    Your grandson is getting in good practice. He'll be melting hearts along with the cheese on sandwiches when the girls get wind of his kitchen prowess in a few years!!!

  19. I like the cottage teapot and teacup Kitty, perfect for any weather. The cream cheesed stuffed french toast looks yummy, I think a half is all I could eat myself.
    Our mornings have been cool with the day becoming in the low 70s which is fine by me. I hope you get some cooler weather yourself soon.

  20. Oh Kitty - why do you tempt me with such things? I have to try this because cream cheese and cinnamon bread are my two favorite things and having them together is just too good to be true! I love the idea of putting the doily between the clear plates. So nice to have a helper in the kitchen, too. Love the sweet cottage cup and saucer. We are still enjoying summer here, but getting cooler at night which makes it much more pleasant to sleep! I hope you get some cool breezes this week. Hugs xo Karen

    We make stuffed French toast all the time, but this sounds wonderful to have it be the overnight kind. How fun to have such a little helper. I love it when the little ones want to get in on the fun. It helps them try new foods too!

  22. Wow, does that ever look good, Kitty! You are such a good cook! I adore your teacup and teapot too. It does indeed feel like fall here with highs in the 60s and 70s of late. Still expect some hot days, but am really enjoying the cool ones, especially for working in the garden!
