How about a quick soup for a Super Bowl party? This soup sure fits the bill and has just the right amount of spicy heat. I LOVE soups and have been making one or two per week. I think your family and guests would love this one. I found the recipe in dashrecipes.com and it's a keeper.
For Soup
1/4 cup olive oil
2 onions, diced
Kosher salt
5 cloves garlic, minced
2 canned chipotle chiles in adobo sauce, finely chopped (see Note)
4 (15-oz.) cans hominy, drained and rinsed
2 (32-oz) containers low-sodium chicken broth
1 rotisserie chicken, skin and bones discarded, meat shredded
For Toppings
Sliced scallions,
Grated cheese
Sliced avocado
Lime wedges
Cilantro leaves, minced
Crushed tortilla chips
Sour cream
Warm oil in a large pot over medium-high heat. Add onions, season with salt and cook, stirring until softened, about five minutes. Stir in garlic and cook until soft, about 1 minute. Add chipotles and cook 30 seconds. Stir in hominy and cook, stirring, 5 minutes. Add chicken broth, season with salt and bring to a boil. Remove from heat, stir in chicken, and cover pot to heat through. Serve with assorted toppings.
Serves 10-12
NOTE: The extra chipotles can be frozen individually with some adobo sauce on wax paper and then put in a freezer proof bag.

ReplyDeleteWhat a great idea to serve soup at a Super Bowl party!
ReplyDeletePozole! We love to eat pozole. Thanks for the recipe.
ReplyDeleteMy spouse and love posole. I actually have homemade broth and a rotisserie chicken that I cooked down and froze, because I was sick of enchiladas, so I am going to have to try this fast method of making it! Thank you for sharing.
ReplyDeleteThis Georgia girl has never had hominy. True story. I need to remedy that and try this. I will be pinned with my other soup addiction recipes. I believe more than one on there already has come from you.
ReplyDeleteKitty, unlike Debbie, I love hominy. Love the texture. I think this is a fabulous recipe and I can't wait to try it. Joni
ReplyDeleteLove it! I will definitely try this. Since the next 2 days are supposed to be bitterly cold again, this would be perfect.

Kitty, I pinned this. This sounds delicious and easy. I usually stay away from Mexican food because it always calls for cilantro. Yes, I am one of those. I love the chipotle in adobo, the avocado so I will give this a try.
ReplyDeleteSounds luscious right now...bitterly cold here! I've never tried hominy either! I hope to try making this one just as soon as I can get out to the grocery store. Thanks Kitty!!
ReplyDeleteOh boy Kitty, this looks so good. I LOVE soup in the winter; it's my very favorite comfort food. This looks hearty and as you say, a good recipe for Super Bowl night! :) Thank you for sharing the recipe; I hope you're staying warm during this extra cold week.
ReplyDeleteBig hugs to you,
Denise at Forest Manor
That sounds so flavorful! I've never made this soup but I'd like to try it. We eat a lot of chicken and it's nice to have variations. Sweet hugs!
ReplyDeleteKitty, I've never tried hominy, but I'm putting it on the menu--your recipe, too--because your soup looks delicious. With temps in the single digits, your soup came at the perfect time. Have a great weekend. xxoo
