Date Bark for My Sunflower Theme

I set my patio table as the sun was setting. 

We have had 48 days at or above 100 degrees in the Dallas area and we are so weary of it!  I used a pretty tea towel as my table covering that Debbie, from Mountain Breaths sent me years ago.  I keep it on my oven door during the end of summer months and never wash it because I want it to stay beautiful!  


This cottage teapot was my beloved mom's and I used some of the flowers from a bouquet that Riley's girlfriend gave me when I had them over for a charcuTEArie party recently.  



My Pier 1 sunflower plates are used during August and September and my pretty sunflower teacup and saucer are unmarked but add to the cheeriness.



I saw versions of this bark on the internet and just decided to try my own.  It's so good and quite addictive!



First you split open the pitted whole dates and lay them close together.


Add peanut butter and chopped peanuts to the dates.


Spread on the melted chocolate.


Yield: enough for a group to snack on

After seeing this on the internet, I decided to just go for it and try my own version. Besides peanut butter and peanuts, you could try almond butter and chopped almonds. It satisfies the sweet tooth. My son Mike tasted it and said that it reminded him of a Snickers bar. My measurements are not exact, but approximate, as I just scooped and went for it!

Ingredients

  • Pitted whole dates ( I used about 25 )
  • About 1/2 cup of peanut butter
  • About 1/3 - 1/2 cup chopped peanuts
  • About 3/4 cup semisweet chocolate chips
  • 1 teaspoon coconut oil or vegetable oil

Instructions

  1. Cut open the pitted dates length wise and place them close together on some parchment paper. You can use another piece of parchment paper on top and use a rolling pin to try to spread them out more.
  2. Put the peanut butter in a microwave safe bowl and then microwave for about 20 seconds, just enough to get it to spread easily on top of the dates. Spread the peanut butter on top of the dates, and then sprinkle the chopped peanuts on top of the peanut butter.
  3. Put the chocolate chips and oil in a microwave safe bowl and then microwave for about 30 seconds, stir, and melt more if needed to be able to pour.
  4. Pour the melted chocolate on top of the peanut butter/nut layer and spread to the edges.
  5. At this point, I put in the freezer to harden the bark before cutting into small pieces.
  6. Store the bark in the refrigerator.

Notes

I think a sprinkle of flaky sea salt would be a nice touch on top of the melted chocolate.




My son Tim came over to watch his Alma Mater, Texas A&M win against Arizona State, with my son Mike.  We don't want to talk about what happened with the Ohio State vs. University of Texas game later that evening!  It was a heartbreaker with my Alma Mater, Ohio State losing by 1 point at the very end.

    Your mom's teapot is such a treasure. I love the tea towel and sunflower plate. And let’s not forget the teacup. It is darling.
    The Chocolate Bark looks incredible. How fun! How delicious!
    How wonderful to have your boys together watching football. I was soooo sad about the Buckeyes. They did not play in the second half.
