Carrot Raisin Muffins



For the first week of Spring, I decided to go outside. It was still a little chilly and overcast, but it's so nice to see my waterfall.  The pretty azalea plant was a Valentine's gift from my daughter.  It's still looking so nice!


I'm using my pretty Grace's Teaware teapot from Mary.  Isn't it perfect for Spring and Summer?  I've been using it on my morning breakfast tray, too.  Thank you so much, Mary!


I thought my Royal Albert Spring Meadow teacup looked so nice with the teapot.   It's from a collection that Kristen and Kevin gave me of the 100 years of Royal Albert.

Carrot Raisin Muffins

I printed off the recipe for Carrot Raisin Bread from Mimi's Cafe that they shared in 2001, but made the recipe into cakelets. You could make cake, muffins, mini bundts, or bread with this.

Ingredients

  • INGREDIENTS
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup vegetable oil
  • 1 cup brown sugar
  • 3 eggs
  • 1/2 cup chopped walnuts
  • 1/2 cup diced canned pineapple, drained (I use crushed)
  • 1/2 cup raisins (I used golden raisins this time because that's what I had)
  • 1 cup finely shredded carrots

Instructions

  1. Sift first five ingredients into a mixing bowl. In a separate bowl, whisk together the oil, sugar and eggs. Stir the liquid mixture into the flour; mix well. Add the next four ingredients; stir again.
  2. Grease and flour a 9-inch square pan or four mini-loaf pans. Fill the pans 2/3 full with batter. Bake at 350 degrees F for about 30 minutes. Mini-loaves take about 20-25 minutes. The bunny cakelets took about 25 minutes, but check with a toothpick to see if they're done.




My youngest son, Kevin,  and youngest granddaughter, Hayden, asked if I'd like to go to the Dallas Arboretum....ah, YES!!  What a perfect day to see the tulips, azaleas,  Cherry Blossom trees and all the bursting springtime.  DIL, Kristen, and granddaughter Harper were camping with the Girl Scouts.

There was so much beauty, but the sweetest little beauty was this little one.
