Colonial Pumpkin Bars

It's still been so beautiful here in Texas, except that we did get storms and rain all day on  Friday. I'm still enjoying my waterfall and having tea from my cottage teapot, along with some pumpkin bars. 

I'm hanging my head in shame as I bought a new Fall teacup.  I just couldn't resist the pretty design.  It says Queen Anne on the underside.

Colonial Pumpkin Bars

Colonial Pumpkin Bars


  • Pumpkin Bars
  • 3/4 cup butter
  • 2 cups sugar
  • 1 (16 oz.) can pumpkin
  • 4 eggs
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 and 1/2 teaspoons pumpkin pie spice
  • Cream Cheese Frosting
  • 8 ounces cream cheese, softened
  • 1/2 cup butter, softened
  • about 4- 5 cups powdered sugar
  • 1 teaspoon vanilla


  1. For Bars: Cream butter and sugar together. Blend in pumpkin and eggs
  2. Mix remaining ingredients together and add to creamed mixture. Spread in a greased 10" x 15" pan for bars, or for a cake, into a 9" x 13" pan. Bake at 350 degrees for 25-35 minutes, depending on the size of the pan. When Cooled frost with Cream Cheese Frosting.
  3. For Frosting: Blend cream cheese and butter well. Gradually add powdered sugar and beat until smooth. Add vanilla and blend well.

My daughter and I watched Caiden's last high school football game together, as he'll graduate in the Spring.  He's #26. It's so wonderful that we get to enjoy these special events.

Harper turned 8 on Saturday and had a gymnastics party.  She was so excited to be with her friends. I'm so thankful to share in these moments of joy.


My two oldest grandsons, Connor on the left and Riley on the right turn 22 and 19 this week.  I'm so proud of them and their service.

    It must've been bittersweet to watch the last football game of high school for Caiden. But onward and upward!

    Your young men in the service make me proud, too. Especially since they are serving in challenging times. God's love and protection on them and all our people in the military. Where would we be without them?!

    You have a beautiful family...all doing great and fun things. Happy Birthday to each one celebrating a birthday. They certainly all piled up on the calendar. πŸ˜‰

    That recipe sounds heavenly. If I had another can of pumpkin, I might consider it.
