Blueberry Scones with Lemon Glaze




For this Memorial Day, I made some Blueberry Scones, and I'm having some blueberry tea that my sister sent to me. The pretty silver platter belonged to my paternal grandmother.  I think it's so beautiful.  The angel wing begonia is doing really well, but it's usual place is on an old milk can. 

A sweet friend sent me this Poppy teacup after my hubby passed away.  Poppies are the symbol for Memorial Day. We are free thanks to the brave. 

I thought I'd show you some of my shade plants.  I have several kinds of ferns and also the variegated flax lilies.

There's another angel wing begonia on my bird station. 



Riley graduated this past week and has my hubby's army jacket on, which he asked if he could keep. Riley will be serving our country and going into the Army this summer.  


My daughter works in the school system and was able to give Riley his diploma.  I was honored to be able to sit with her in a reserved seat.  

We sang "America the Beautiful" at the end of my church service yesterday and it made me cry for so many reasons.  πŸ’™πŸ‡ΊπŸ‡Έ❤️

Blueberry Scones with Lemon Glaze

Blueberry Scones with Lemon Glaze

Oh my goodness, these scones are so light and the perfect texture. They don't have much sugar, but the lemon glaze adds the perfect touch. I cut the glaze recipe in half and it was the perfect amount.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt (I omitted because I used salted butter)
  • 2 tablespoons sugar
  • 5 tablespoons unsalted butter, cold, cut in chunks (I used salted butter)
  • 1 cup fresh blueberries
  • 1 cup heavy cream, plus more for brushing the scones (I only had 1/2 cup heavy cream, so I added 1/2 cup of evaporated milk and it worked fine)
  • Lemon Glaze: (This is the perfect amount)
  • 1/4 cup freshly squeezed lemon juice
  • 1cup confectioners' sugar, sifted
  • 1/2 tablespoon butter
  • 1/2 lemon, zested

Instructions

  1. Preheat the oven to 400 degrees.
  2. Sift together the dry ingredients; the flour, baking powder, salt, and sugar. Using 2 forks or a pastry blender, cut in the butter to coat the pieces with the flour. The mixture should look like coarse crumbs. Fold the blueberries into the flour mixture. Take care not to mash or bruise the blueberries because their strong color will bleed into the dough. Make a well in the center and pour in the heavy cream. Fold everything together just to incorporate; do not overwork the dough.
  3. Press the dough out on a lightly floured surface into a rectangle about 12 by 3 by 1 1/4 inches. Cut the rectangle in 1/2 then cut the pieces in 1/2 again, giving you 4 (3-inch) squares. Cut the squares in 1/2 on a diagonal to give you the classic triangle shape. Place the scones on an ungreased cookie sheet and brush the tops with a little heavy cream. Bake for 15 to 20 minutes until beautiful and brown. Let the scones cool a bit before you apply the glaze.
  4. Whisk the lemon juice with the confectioners' sugar, and add the butter and the lemon zest. Microwave for 30 seconds, and then whisk to remove any lumps. Drizzle the glaze over the top of the scones. Let set a minute before serving.

  8. Oh my that picture of Riley wearing your hubby's jacket! What a treasure! I just love that poppy tea cup - I've not seen anything like that. This weekend I went to a one day estate sale and they were really just trying to get rid of everything so prices were all negotiable. I found a bunch of beautiful tea cups that were scattered around and lo and behold . . . all of the matching saucers were in a cabinet in the kitchen just stacked up with a bunch of odds and ends! I put together five sets and when I went to check out the lady said, "10.00 for all of them?" I should have gone back for more haha but I was exhausted after rummaging through all of the stuff in this house for over an hour! There are some real beauties so I'm working now on my new/old china hutch so I can get them all displayed and begin using them!
