I've baked us a small banana cake with cream cheese frosting to celebrate Spring. This is coming from a girl who can't even stand the smell of raw bananas!! I literally have to hold my nose while peeling bananas and mashing them. However, something magical happens while baking, and I can eat banana bread, banana muffins and banana cake. Harper and Hayden tease me and laugh and laugh and call me Nana Banana!!
I'm still using the flowers from my sister and filled my lady head vase with some of them. Doesn't she look grand?
I thought these two teacups looked pretty with the lady. The one in the front is Grace's teaware and the one in the back is Royal Cuthbertson.
I was with these family members over Mother's Day for brunch. The only person I didn't get a picture of was my son, Tim.
I received more flowers!
I fixed a little fairy garden.
My grandson, Caiden, turned 17! This kid has good grades, gets up early for sports everyday, and he has an after school job. I'm so proud of this young man.
Yield: 1 large or 1 small and 4 mini bundts
Banana Bundt Cake
I put together several recipes that I found and came up with this.
Ingredients
- For the Cake:
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 stick butter, softened
- 3/4 cup brown sugar
- 2 teaspoons vanilla
- 2 eggs, at room temperature
- 1 cup buttermilk (see NOTE)
- 3 bananas, mashed
- For the Frosting:
- 4 ounces softened cream cheese
- 1/4 cup butter, softened
- 1-1/2 -2 cups powdered sugar
- 1 teaspoon vanilla
Instructions
- For the Cake:
- Preheat oven to 350 degrees. Spray your bundt pan with cooking spray, such as Baker's Joy.
- Combine the flour, baking powder, baking soda, salt, and cinnamon.
- In your mixer bowl, beat the butter and brown sugar until light and fluffy. Beat in the eggs, and vanilla.
- Mix in the buttermilk and mashed bananas. Slowly add in the dry ingredients, stirring into fully incorporated.
- Pour into the prepared pan(s), and bake for 40-45 minutes for the large and about 35 for the small bundt, and 20-25 for the mini bundts, or until a toothpick inserted comes out clean.
- Allow to cool for about 15 minutes before inverting onto a cooling rack. Frost with cream cheese frosting.
- For the frosting:
- Cream the cream cheese, butter together and vanilla together. Add the powdered sugar and beat until smooth.
- You can pipe on the frosting with a pastry bag or just fill a food storage bag with the frosting and cut one of the ends off, and pipe the frosting on, or just spread with a knife.
- I added toasted, chopped walnuts for a garnish.
Notes
I added a tablespoon of white vinegar to my measuring cup and then added my milk to reach the 1 cup. Allow this to sit for several minutes.
