Quick and Easy Egg Salad from the Instant Pot

 How're you all doing during our Shelter in Place?  I've been in my kitchen a lot these days.  Would you like to join me for a cup of tea and some egg salad? 

 You can use my pretty Johnson Brothers Rose Chintz teacup, if you'd like.

 My Mr. and Mrs. Bunny are happy that you've stopped by.  I made this bunny couple probably  over 30 years ago, but updated their outfits several years  ago.

 I tried this new way of cooking eggs in the Instant Pot, whereby you crack them into a bowl.

 You place them inside the IP on the trivet, with water below.

 Voila!  Hard cooked eggs without having to peel!

 The eggs slide right out onto a cutting mat.

 You then chop them up and you're ready for egg salad!  I used a pizza cutter for quick chopping.  What do you use in your egg salad?  Mine is pretty basic.

Yield: I used 5 eggs, but you can use whatever amount

Egg Salad from the Instant Pot

Even though making hard cooked eggs in the shell is super easy in the Instant Pot, cracking them first into a bowl makes it even easier!

Ingredients:

  • 5 eggs (but use however many you like)
  • chopped celery
  • finely minced green onion
  • salt and pepper
  • sometimes I squeeze a slice of lemon for some bright flavor
  • Mayonnaise

Instructions:

How to cook Egg Salad from the Instant Pot

  1. Spray a glass bowl that is safe to use in the Instant Pot.
  2. Crack your eggs into the bowl.  I always crack the eggs into a small bowl, one by one first just in case of getting a bad egg.
  3. Put 1 cup of water into the bottom of your Instant Pot, then place your trivet inside , making sure that the handles are up along the sides.
  4. Place the bowl with the eggs into the Instant Pot, on top of the trivet.  There's no need to cover the eggs with any plastic wrap.
  5. Secure the lid of the Instant Pot and make sure that the steam release handle is in the "sealed" position.
  6. Select "pressure cook" and set it for 10 minutes.  After the time is up, let the pressure release naturally for 5-7 minutes, and then do a quick release, if needed.
  7. Open up the Instant Pot and using mitts, lift the bowl out of the Instant Pot.
  8. Slide the eggs onto a cutting mat.  You may need to blot the top of the eggs with a paper towel, and them chop up the hard cooked eggs.
  9. I add some chopped celery, minced green onion, mayo and salt and pepper.

  1. Hearty Texan eggs. =) They look easy to whip up. Mr and Mrs Bunny are so sweet, but, I must say I have taken a liking to that pretty teacup. Isn't the large, chintz rose beautiful. I am quite certain tea would taste ever so much more delectable in this pretty teacup. =)

    Hmmm...egg salad sounds so good right now, and I like your recipe!
    I have been keeping really busy at home...always plenty to do! Yesterday I made a few fabric pumpkins, something I have wanted to do every Autumn for the past few years! Today I am helping the little ones with a sweet sewing project. Glad I can have some extra time with them during lockdown!

  5. What a great way to cook your eggs for egg salad Kitty! I don't have an IP but have heard it's a great way to steam them too for easy peeling if you wanted to make deviled eggs. Have you tried that? If so it would be worth me buying one just for that feature. :) You know I love your pretty JB Rose Chintz teacup and Mr. & Mrs. Bunny are adorable!   6. That looks like a good, easy method. Any flavor/texture differences? Your egg salad is very similar to mine except that I add a wee bit of sweet pickle relish and a wee bit of yellow mustard.

  7. Hello Kitty, I will have to try out this way of making hard boiled eggs. I've seen where you put the eggs in the shells in the IP and cook them, but this is the first time seeing it done like this. I will have to try it out sometime. Hope all is well with you. Stay safe and have a nice week.

  10. That's crazy! I don't have an instant pot but this could make me want one haha! I just made some hard cooked eggs for my spinach salad to go with dinner tonight. I'm someone who really enjoys being at home but I have to admit that now being on week 3 for me working from home, I'm starting to miss people haha! I knew you'd be in that kitchen whipping up delicacies!

  11. I would have never thought of cooking eggs that way! I don't have or want an Instant Pot, but this is one of the most unique usages I've seen. I like a bit of finely chopped dill pickle in my egg salad, or olives, along with the celery that you've included. Such a pretty teacup!

  14. My daughter loves her IP. One of these days, I"ll get one for sure. Egg Salad is a favorite around here, but it's hard to find eggs right now. I hope that will change shortly.

  20. I love egg salad! Just had an egg salad sandwich for lunch today :) I think mine might be more basic than yours! I just used mayo, S & P and celery seed. Found the celery seed idea in our newspaper. It was from a small local cafe that shared it and I've used it ever since I like it so much. You bunnies are adorable!
