Fluffy Tapioca Pudding

 Do you love tapioca pudding?  It's one of my all-time favorite desserts, and pure comfort food.  My late beloved mom loved it, my sister loves it, my son that lives here with me, loves it, and so do I.  My mom was so happy when she found a box of tapioca pudding mix, that Kroger sells, and you just add milk and cook.    It's really good, too, but I still prefer the one where you add all the ingredients.   I'd love to have you join me for my virtual tea party, and share some pudding with me.  It's still chilly and dreary here, so we'll sit by the fire.  You can tell me what projects you're working on.  I'll tell you that I've been baking, cooking, and making jam.  

The pretty stemware that's holding the tapioca,  belonged to my maternal grandmother, and the plate underneath, was given to me by my mom.


 My friend, Mary, gave me this darling bunny teacup.  Isn't it the sweetest??!!  I love the springtime colors, the bunny, and the scalloped edge of the cup.  It brings joy to sip tea from a new teacup!

 The saucer is every bit as cute as the cup!


 Look at all this assortment of teas that my friend, also, gave me!  Would you like Passionfruit, Very Berry, Sai Mu Dan, Jasmine, Lemon Ginger, or Chun Mei?

 My dear Mom embroidered this tablecloth when I was just a little girl.  It's still is such beautiful condition, and I'm happy to have it.

Fluffy Tapioca Pudding

Fluffy Tapioca Pudding

I think I could eat this every single day of my life! The recipe is on the box of Kraft Minute Tapioca, but I've changed the steps in preparing it. I've also made the pudding using pearl tapioca, but that requires soaking overnight.

Ingredients:

  • 1 egg, separated
  • 6 tablespoons sugar, divided
  • 3 tablespoons Minute Tapioca
  • 2 cups milk
  • 1 teaspoon vanilla

Instructions:

How to cook Fluffy Tapioca Pudding

  1. Mix tapioca, milk, egg yolk, and 3 tablespoons sugar in a medium saucepan.
  2. Let stand for five minutes.
  3. While the above mixture is standing, beat the egg white in a medium bowl with mixer on high speed, until foamy.  Gradually beat in 3 tablespoons sugar until soft peaks form.  Set this aside.
  4. Bring the milk/tapioca/egg yolk/sugar mixture to a full boil on medium heat, stirring constantly.  Remove from heat.  Add the egg white mixture gradually, stirring until blended ( I like using a whisk).  Stir in vanilla.
  5. Cool 20 minutes, and then stir.  Serve warm or chilled.  Keep refrigerated.

  1. Fluffy Tapioca Pudding sounds to me to be the most delicious comfort food. How gorgeous your beautifully set table is. The sweet bunny teacup and saucer is sweet and teams perfectly with the bunny teapot. Love the big bunny, too. So lovely that you have the embroidered cloth your mother lovingly stitched when you was a wee girl. As for the tea I would choose.....any of these brews would be a delight to sample. I have not tried any of these. Sitting by your cosy fire chatting with you, dear Kitty, would be a haven in these troubled times. Xx

  3. I love tapioca! My grandparents really enjoy it, so we would have it at their house. The darling bunny teacup is so joyful! I used two cups and saucers for our coffee yesterday that I had not used in ages. Since I am staying home more, I get to enjoy my house more. xo

  4. I hate to admit this Kitty, but I've never had tapicoa pudding! But if you all love it it must be good! The bunny cup is adorable, and tea must come in every flavor imaginable! Your cabbage pot is adorable too! I rarely have tea, I need to get more civilized :)

  7. I did try tapioca pudding once and did not care for it. Who knows...my taste buds have changed so I might like it now. LOL! But I do love your darling tea cup. Girl, look at your stash of teas. YUM! I love that vignette. That bunny is the cutest ever and that tea pot...I love it! I have a cabbage tea pot I actually put out on a table for Sunday dinner outside yesterday.   9. Now Kitty I believe I can modify this for my Weight Watchers plan! I use a wonderful sugar substitute (Monk Fruit) that tastes, bakes and cooks just like sugar and has NO aftertaste. I just need to get the tapioca - I LOVE tapioca and haven't had it in a LONG time. I would love to enjoy a cup of Jasmine tea with you! Love that tablecloth your mom made - what a treasure! I found a pretty spring one at an estate sale before we were 'locked down' and I'm going to put it on my kitchen table. I put up my spring decorations over the weekend - I though we could use something cheerful!

  16. Kitty, I too love tapioca pudding and I have been eating it almost every day lately to get all my meds down. I usually make it from the directions on the box. But I have never separated the egg. You have served it so prettily in the stemware. Your new teacup is simply darling! Who wouldn't enjoy a cup of tea from that?   20. Tapioca pudding has always been a favorite of mine since I was a little girl too. My mom made it two ways...one like the one you shared and also the large, whole, round beads that you have to cook, cook, COOK! My siblings and I called this "frog eye pudding" because well, the tapioca looked like big ol' frog eyes! LOL! Thanks for the invitation to your lovely virtual tea party, Kitty! HUGS!

  22. Hi Kitty, Tapioca is a favorite of mine, too, although my children never liked it, so it was only a treat for the Mr. and I. I haven't made it in ages, so thank you for sharing the recipe! Love your sweet tea-table with the wonderful, sentimental china and embroidered cloth. Such dear treasures! I am trying to keep busy during our stay-at-home time, organizing, cooking, and lots of cleaning. The weather has turned cold so we are inside and keeping a fire burning, too.
