Watermelon Honey Fruit Salad

I'm back from Colorado and facing hot temperatures here in Texas! 

While in Durango, we visited Honeyville, a shop with all things honey, and I brought home their pamphlet which included several recipes.

My Susan Winget watermelon teapot is not holding hot tea today, but Very Berry iced tea.  

My son Tim painted this slice of wood when he was six years old when we lived in Ohio.  My late beloved hubby would use a chainsaw every year to cut up cords of wood for our wood burning stove, and these wedges of wood would happen.

Watermelon and Honey Fruit Salad

We visited Honeyville in Durango for a fun stop and tasted all kinds of honey, and saw all kinds of honey/bee related items. I used yellow watermelon because I thought it would look pretty with the berries.

Ingredients

• 2 lbs. watermelon, cut up into bite-size cubes
• 6 oz. blueberries
• 6 oz. raspberries
• zest from half a lemon
• 1/4 cup Wildflower Honey (or whatever you have)
• 1/4 teaspoon cinnamon
• mint for garnish, optional

Instructions

1. Combine fruits in a bowl.
2. In a small saucepan on low heat, blend together the honey and cinnamon. Remove from heat, and drizzle over the fruit and gently toss to ensure that all the fruit is coated with the syrup.
3. If fruit is very warm, let it continue to cool. Toss with lemon zest, and garnish if you wish.

Our first day in Durango, CO, we met Kevin and Harper up at the Purgatory Ski area where they were mountain biking.  Kristen and Hayden were waiting for us at their Durango home where they stay the month of July.  Some of our family were not able to be with us, but there were twelve of us there from left to right are:  Elizabeth, Caiden's fiancee, Caiden, Molly, me. Riley, on vacation from the Army, his friend Megan, Cissy, Kevin, Harper, Mike behind Harper, Kristen, and Hayden.   The middle photos were of our second day where we took the 3-1/2 hour train ride, from Durango to Silverton, ate pizza, shopped,  and then took the bus ride back to Durango.  The route was completed in July, 1882.  The bottom photos show some of the scenic route.

We played lots of games, such as Just Dance, Karaoke, Reverse Charades, cards, stunts, corn hole, ping pong, balls and ladders and had such fun.  The top right we had dinner at the James Ranch, which is a wonderful outdoor venue with music, after being at Durango Hot Springs Resort.  Molly took a picture of us at Molas Lake, and the bottom photo is of the group that hiked to Engineer Mountain.  Kevin and Harper mountain biked there and met the group.  Molly and I did our own hike.

The top photo is us at Durango Hot Springs, but we were cooling off in the pool after trying all the hot springs.  in the next photos, we went to Molas Lake where those who wanted did kayaking and paddle boarding.  Kevin took Hayden and me in his Origami kayak (it unfold and pops open).  Our whole group then had a picnic.  As you can see from the background, it is so very scenic.  We had such a wonderful family vacation and every chance that Hayden had, she wanted to be with or drive with her cousins.  Kevin said that she must've been sick of being with their own family!
