Chai Spiced Snickerdoodles

Our temperatures have spiked back into the 100's!  Sadly, I have to pretend that it's Fall.  I used up my DIY Chai Spice mixture and made some snickerdoodles using the mix. 

I'm using my pretty Royal Albert Flower of the Month Michaelmas Daisy teacup.

My friend Margie, at Tea in the Valley sent me three samples of pumpkin teas to try; two are pumpkin chai and one is a pumpkin cream.  Margie is a tea connoisseur!   Thank you, Margie!  I am enjoying sampling them and writing down my thoughts.

These cookies are perfect with a cup of chai tea!

Yield: 4-6 dozen depending on size made

Chai Spiced Snickerdoodles

I have always used the recipe from Betty Crocker for snickerdoodles, but this time I adapted it using some of my chai spice mix.

Ingredients

• 1/2 cup butter, softened
• 1/2 cup shortening
• 1 and 1/2 cups sugar
• 2 eggs
• 2 and 3/4 cups flour
• 2 teaspoons cream of tartar
• 1 teaspoon soda
• 1/4 teaspoon salt
• 1 tablespoon chai spice mix (See NOTE)
• Topping:
• 1/4 cup sugar
• 1 tablespoon chai spice mix

Instructions

1. Instructions
2. Heat oven to 400 degrees.
3. Thoroughly mix butter, shortening, sugar, and the eggs.
4. In a separate bowl, thoroughly mix together the flour, cream of tartar, soda, salt, and chai spice mix. Add this to the creamed mixture and blend.
5. Shape dough by rounded teaspoonfuls into balls, if you want small cookies, or walnut size balls for larger cookies.
6. Mix the topping ingredients together and roll the balls into the mixture. Place 2" apart on ungreased baking sheets. At this point I refrigerated the balls because they seemed a little soft. Bake 8-10 minutes or until set. I prefer the 8 minutes. Cook a little longer for the larger size balls.
7. Remove from baking sheets and cool.

Notes

DIY Chai Spice MIx:

4 teaspoons cinnamon

2 teaspoons cardamom

2 teaspoons nutmeg

2 teaspoons allspice

2 teaspoons ground cloves

1 teaspoon ginger

This swallowtail butterfly showed up in my backyard one evening.
