Chai Spice Scones



I am so grateful that we have had cooler temperatures!  What a relief to be able to sit outside.  I made some chai spice scones for a friend who had surgery, and who loves tea treats and tea.  I thought she might like some Vanilla Chai Tea to have with the scones.

I had a busy week and attended 3 volleyball games, a football game, and a soccer game this past week, and a relaxing cup of tea is just what I need!


My Calico teacup is so pretty to use in the Fall.  

When you make scones, keep them close together while baking.  


The scones bake beautifully when then have just enough room to rise.


I made a DIY chai spice blend by reading various ideas and then making my own.

Chai Spice Scones

Chai Spice Scones

September 21 is National Chai Tea Day, and these are perfect for that. I think mini chocolate chips would be a nice addition as an ingredient.

Ingredients

  • 2 3/4 cups all-purpose flour
  • 1/4 cup sugar
  • 3/4 teaspoon salt
  • 1 tablespoon baking powder
  • 2 tablespoons chai spice mixture (See NOTE)
  • 1/2 cup (1 stick) unsalted butter, cut into small cubes
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup milk
  • Topping
  • 1 tablespoon milk or heavy cream
  • 2 tablespoons sparkling white sugar

Instructions

  1. Combine the flour, sugar, salt, baking powder and chai spice blend in the bowl of a stand mixer fitted with the paddle attachment. Add the cubed butter and mix on low speed until the mixture is crumbly and the butter pieces are roughly the size of peas (some may be slightly bigger or smaller, that's fine).
  2. In a medium measuring cup, whisk together the egg, vanilla extract, and milk. Add to the mixer bowl and beat on low speed just until the dry ingredients are moistened and the dough comes together - just don't over mix.
  3. Transfer the dough to a lightly floured work surface. Divide it in half and shape each half into a circle that's roughly 6 inches in diameter and 3/4-inch thick. You can either slice each circle into 6 wedges, or use a 2 1/4-inch round cutter to cut 6 rounds from each (you'll have to re roll the scraps if you go this route). Transfer your scones to a parchment-lined baking sheet. If you've cut rounds, put them close together (about 1/2-inch between them). If you've cut wedges, leave them in the circular shape and just slightly pull them from the center to separate the edges about 1/2-inch.
  4. Brush the tops of the scones with milk or cream using a pastry brush, then sprinkle with the sparkling sugar. Freeze, uncovered, for 30 minutes. Meanwhile, preheat the oven to 425 F.
  5. Bake for 20 minutes, or until the scones are golden brown and feel firm to the touch. Transfer the baking sheet to a wire rack and let the scones cool for a few minutes before removing them to the rack. Serve warm or at room temperature.

Notes

Chai Spice Blend: Mix together

4 teaspoons cinnamon

2 teaspoons cardamom

2 teaspoons nutmeg

2 teaspoons allspice

2 teaspoons cloves

1 teaspoon ginger

Your flower arrangement is so pretty, and I have a vase exactly like that! :D Your scones look so pretty (and tasty) and I appreciate your tip about placing them close together. I didn't know that -- very helpful. You HAVE had a busy week, and I'm so glad your family keeps you busy and involved in their lives. They obviously love having you around. :D My mom stays busy, too, and I know it helps her to not be as lonely with my dad gone.

    So happy to hear about your cooler weather -- Texas has had a heck of a summer, haven't they? I hope you have a lovely fall week, my friend!!

  8. Cooler temps just beg for scone making. Just this evening my daughter asked for my currant cream scone recipe. And nothing goes better with a scone than a nice hot cuppa!
