Congo Bars with Cherries

Congo Bars are so easy and this time I added cherries! Cissy and I made Congo Bars several years ago, if you'd like to check out the original one here.  We always liked baking together. 

My poinsettia cup was from my daughter several years ago.  It makes me so happy to sip tea from it and think of her. 

A sweet friend sent me this delicious tea all the way from Canada!  Thanks, Margie! The tea is so perfect for a Christmas tea!!  I've tried others and they do not compare to this one.

Congo Bars with Cherries

Congo Bars with Cherries

Congo Bars are so easy, and this time cherries were added.

Ingredients

  • 2/3 cup melted butter
  • 2 cups brown sugar
  • 2 eggs
  • 2 cups self rising flour
  • 6 ounces chocolate chips
  • 1 cup of maraschino cherries, cut up and patted dry with a paper towel

Instructions

  1. In a large bowl, mix the ingredients in order.
  2. Spread into a greased 9 x 13" pan.
  3. Bake for 25-35 minutes.
  4. Let cool and then slice into bars.

Notes

Another variation is butterscotch chips and dates.



I had made Ina Garten's cranberry sauce recipe, and had extra leftover.  Mary, at Home Is Where The Boat Is had posted about it here, and it is so good!  I had enough to freeze some extra jars.  I remembered this recipe of Cranberry BBQ Chicken that I posted when I first started blogging.  It's so easy and so flavorful!  This time I used chicken tenders instead of breasts.  You may use canned whole cranberry sauce if you don't have homemade, but the color is not as pretty.



My meal was so good with the cranberry bbq chicken, roasted cabbage slices and baked sweet potatoes.  I was happy to have leftovers for another night.

  3. Good Morning Kitty, Your Congo Bars look like a yummy sweet treat to enjoy with a cup of tea in your pretty teacup! I love recipes calling for SR flour to save on measuring and sifting. :) Your chicken looks wonderful!! I'm going to have to try it with a jar of cranberry sauce I have in the freezer. I'm so glad you enjoy Ina's recipe, it has made cranberry sauce converts out of cranberry *meh* family members. Thanks for the shout out, Happy Monday. ♥

  7. I love your poinsettia cup, Kitty! The tea sounds so much like the Constant Comment that I've loved for years. I mix it with Stash tea's Ginger Chai Fire, a new favorite. It makes for a warm and spicy cuppa. I would love your dinner! The Congo bars sound wonderful to me too.

    It took me a few seconds to recognize the printing on the tea pouch. LOL. So glad that you liked Murchie's Christmas tea. Their online store offers delicious trees at affordable prices (and I think it's even cheaper after you do the CAD to USD currency conversion).
