Here is a yummy dip for you all of you sports watching friends!
I've been making this dip for so many years, and it's always a favorite.
Grandson, Caiden had his homecoming pep rally and game. He's the one with the gray pants on.
Cissy is a sophomore, but got to cheer with the varsity for the homecoming game. Their school is so wonderful. They honor all the sports teams, not just football, and they honored the special needs kids this pep rally and they received homecoming King and Queen crowns.
Here is Caiden, pictured with my daughter, ready for homecoming, but he went with a bunch of guy friends. That's what a lot of the kids do these days, which is so nice.
Here is Cissy in the red, with her best friends, that are twins, from when they were babies. They all went with a group of girlfriends, and had a fun time.
Yield: for a crowd
Roasted Corn and Black Bean Dip
This is a wonderful dip, which can also be used for a salad. I like to serve it with a sturdy chip for dipping.
Ingredients
- 1- 1# package frozen corn, thawed
- 2-3 tablespoons oil
- 1 tablespoon salt
- 6 tablespoons lime juice
- 2 tablespoons cider vinegar
- 3/4 teaspoon cumin
- 1/3 cup oil
- 1 cup chopped cilantro
- 2 fresh jalapenos, seeded and finely chopped
- 2 large avocados, diced
- 1/2 cup chopped red onion
- 1 red bell pepper, seeded and finely chopped
- 1 can Rotel, drained (or 3/4 cup chopped tomato)
- 2 teaspoons minced garlic
- 2 15-oz. cans black beans, drained and rinsed
Instructions
- For the corn: Toss with the oil on a parchment lined baking sheet and bake at 450 degrees for 20-22 minutes, or until light golden brown, stirring every 8 minutes. Set aside to cool.
- For the Dressing: Combine the salt, lime juice, cider vinegar, cumin and oil and set aside.
- For the rest of the ingredients: Combine the cilantro, jalapenos, avocado, onion, red bell pepper, Rotel (or tomatoes), garlic, black beans and the corn. Add the dressing.
- Serve with Tostito Chips.
Notes
If you want to make ahead of time or the night before, omit the cilantro, avocado and dressing until serving time.
I changed up the recipe to use Rotel, which adds a little more pizzazz!

ReplyDeleteOooh we love bean dip - and rarely have it b/c my hubs isn't a big sportie guy and I usually just watch the Bucks on my tv with a clean bathroom close by, quiet, and already back home. But going to copy your recipe (tysm) because it is so good for summertime gatherings at the lake. And you know we love those! Your family is beautiful and you must be so very proud. ♥

ReplyDeleteI make a very similar dip with corn and black beans and it is delicious! All corn is delicious right now and we've been eating lots of corn on the cob grown in Wisconsin and Illinois. Delish! Love all the wonderful family photos. Your grandkids are so active in sports. Those were the fun days when we would go to all our girls sporting events. When they both graduated high school we didn't know what to do with ourselves for a while - LOL.
