Date Bars


  Finally we have some sunshine, even though it's still cold here in Texas! 

Last week we had school closures from our icy roads, and I stayed put inside.  My son, Mike, slipped on the sidewalk while walking our youngest son, and DIL's dog.  The beautiful flower pot was a gift from my neighbors.  It certainly adds a welcome touch of Springtime to my home. We are going to have some date bars and a cup of Coconut Cream Pie Chai from my friend, Margie.


This teacup belonged to my friend, Rosie's mom, and it's perfect for my Birthday month.


This most lovely tea set was sent from my friend, Michele.  Isn't it beautiful?? Michele is so very thoughtful!  It's so pretty paired with the teacup.  Mismatched pieces add such a lovely blend; much like friendships.

My longtime friend, Joy, took me to a favorite tearoom and we had a wonderful lunch together.  Joy and I first became friends when our girls were around 4 years of age.  Our families went to the same church, went camping together and we were room mom's, too.  We have so many memories that go back over 40 years.  Joy and her family moved to the Dallas area 6 months before we did, and we've remained forever friends.  


These lovely friends, Bea, on the left, and Linda, on the right,  meet up with me at church every Sunday and we have breakfast and much chatting together.  I'm truly blessed in wonderful friendships.

Date Bars

Ingredients

  • Date Filling
  • Mix 8 ounces of cut up dates, 2 T. sugar and 3/4 cup of water in a saucepan. Cook, stirring occasionally for 8-10 minutes, until thick. Using a potato masher really helps break the mixture down. Let cool.
  • Crumb Base and Topping
  • 1/4 cup + 2 T. butter, softened
  • 1/2 cup brown sugar (packed)
  • 3/4 cup flour
  • 1/4 t. salt
  • 1/4 t. baking soda
  • 3/4 cup rolled oats

Instructions

  1. Cream together the butter and brown sugar. Mix in remaining ingredients until crumbly. If needed, add about 1-2 t. water. Press half the mixture into a greased 8" square pan. Spread with the filling. Top with the remaining crumb mixture and press lightly. Bake at 350 degrees for 25-30 minutes.
  2. Cinnamon Icing (optional)
  3. Mix together 1/2 cup powdered sugar and 1/8 t. cinnamon. Add enough milk to drizzle. Drizzle over top of bars.

Notes

This recipe is easily doubled and baked in a 9"x13" pan.

  4. It's a wonderful thing to have lasting friendships, special. It has been so cold here Kitty, more cold winter weather than I can remember. I hope Mike didn't have an injury from his fall. Stay warm and enjoy the week. The sun finally came out after rain since Friday...........

  5. Hi Kitty! What a lovely tea set up you have made yourself. That teacup really is a stunner, isn't it!??!Bet you can't wait to get back out and do some tea parties with your grand girls again - hopefully won't be long now!

    Praying Mike is doing ok. Falling is so now fun. Ice is treacherous. My hubs fell twice about a month ago - same time, one after the other. He hurt his shoulder then but is fine now. Yikes.

  14. What wonderful blessings friends are! Enjoyed seeing the pictures of you and your friends enjoying tea and coffee! I made date bars growing up, we had them all the time. No one ever makes them anymore! I need to change that :) Your chai tea paired with your gorgeous teacups and teapot are just beautiful! And so sweet of your friends to bless you with some beautiful spring flowers! Hopefully Mike is okay and didn't hurt anything. It is very icy here too, and we have to be very careful too. The tea cup brought back memories for me....my mom has a collection of assorted teacups and when I was younger my aunts and grandmother would often tease each other to see who got the lavender cup with violets on it as it was a favorite! You are blessed with long friendships - they are the best! Your weather is so unpredictable, sorry to hear about the fall (ours is very predictable all winter: snow, snow, snow!!).
