Hashbrown Potato Quiche Lorraine


My hubby and I have eaten breakfast in bed for years now.  However, since he retired, he has been sleeping in much later!!  I actually have to eat out in the kozy kitchen sometimes and bring his breakfast in later. 

How's this for rise 'n shine?  I used a napkin as a placemat for color.  The clear handled flatware is from Ross, along with the plate and mug.  I think he'll love it, don't you??


The knock-out roses are from our garden along with a couple of sprigs of rosemary.  Candles are always a nice addition, as long as they're not overpowering. 

I nice sized mug holds our morning tea.


While shopping at Costco, I came across these new hashbrowns that can be stored in the pantry. You rehydrate them with hot water and then fry them in a skillet. I'm a sucker for new foodie products. The Emile Henry pie plate was from a gift card from one of my sons.  I love the fluted edge.  Here's the recipe that was included with the hashbrowns:

This small carton reconstitutes into 6 servings. 

1- 4.2 oz. carton of hashbrowns
2 T. Oil
3 T. cooked chopped bacon
1/4 cup caramelized onion (I just used a little chopped chives)
1/2 cup shredded Swiss cheese
1/3 cup Parmesan cheese
3 eggs, beaten
2/3 cup milk
2/3 cup heavy cream
1/4 t. salt
1/8 t. pepper

Preheat oven to 375 degrees. Refresh potatoes by adding hot water. Let stand 10 minutes.

Butter a 9" pie pan.

Heat the oil in a nonstick skillet over medium high heat, drain potatoes and cook on one side until brown at the edges, about 5 minutes. Press the potatoes into the pie pan to make a crust. Arrange the bacon, onions, and cheeses over the crust.

Beat the eggs, milk, cream and salt and pepper and pour over all. Bake for 25 minutes or until set.
Serves 6

NOTE:  I made this the night before and then cut up slices, reheated slightly in the microwave and served.  I lightly sprinkled mine with bloggy buddy Lynn's, at, new favorite Lawry's Chile and Garlic Coarse Ground Blend.  Wow, did that ever wake up the flavor!  Lynn has me hooked on that stuff!!  Next time, I'll use that in place of the s & p.

    I have seen those hashbrowns at Costco, too...I haven't taken the plunge to buy any, they taste like the frozen ones? They would be great not having to take up lots of precious freezer space...I can find more pantry space for storage!     There is a restaurant called Mimi's Cafe near the Polaris Mall east of me that has really great QL - I get it almost every time I dine there.

    If you ever visit relatives back here maybe you and I can go there to share one or something. Wouldn't that be FUN??

  11. I am always looking for breakfast recipes and this one fits the bill to a 't'!! Thank you , it looks scrumptious. A very pretty set up with the gorgeous rooster mugs, for breakfast.. I must ask though... is the quilting by hand on the pillow or the hand-look quilt stitch on the machine? And the decorative stitch - machine or hand..   14. I was immediately drawn in by the name of your post. I like hash browns, and I like quiche Lorraine! Putting the 2 together can be nothing short of fabulous for the taste buds!!!

    I have been using those hash browns from Costco for about 3 years now. LOVE THEM! My Mom turned me on to them, and Ramon loves them for breakfast, lunch and dinner! They are so incredibly easy to make!!! I just chop up some fresh green onions, red & green peppers, toss 'em in, and we're good to go!

    I like the way you maintain the balance of power in your household by serving your husband breakfast in bed. I must file that note away for future reference! Whenever I feel that he's getting the upper hand or that I need to sway a decision my direction, I'm going to whip out the old breakfast-in-bed hat trick!!! I'm sure that's not what YOU use it for, though, Kitty! You're much too sweet and innocent!!! :-)

    My ex-DH used to bring me a cuppa tea in bed, every morning before he left for work. One of the few NICE gestures he did.

    I recently box a box of Hungry Jack dehydrated hash browns, but haven't had a chance to try them. I think I'll do them YOUR way!

  25. Kitty, I LOVE those dishes, and I love the way you've used the dark blue and the red linens with them. It would be wonderful to be served breakfast in bed on this pretty tray setting. That hasbrown pie looks delicious. We don't have a Costco. I'm going to remember to look for those somewhere else. laurie

  28. I will always remember that you and your sweet hubby have breakfast in bed! I only know one other couple that does that. Joe and I will have breakfast on occasion at camp since our weekends are leisurely. I just bought the Lawry's Chile and Garlic Coarse Ground Blend. Can't wait to try it based on your recommendation. Followed recipe, except added Mexican "Crema" (like a creme fraiche) instead of milk and cream. It's so so good. You made me happy tonight!

    What a fun wake up call! My whole kitchen is filled with roosters and chickens; they are so cheery and yours are TOO cute!! Your potato quiche lorraine looks divine, especially with all the farmhouse crockery. I make a bacon onion tart that has been a crowd pleaser for years. Nothing like bacon to please the palette!
