This is a quick, tasty recipe, with a little heat, for cooking on the grill this Summer. There really aren't any measurements, as I just throw it together. Here's the recipe:
4 skinless, boneless chicken breast
Italian dressing, maybe a 1/2 cup
jalapeno, diced
a couple of garlic cloves, minced
freshly ground pepper
Put the Italian dressing, diced jalapeno, garlic and pepper in a zip lock bag. Add the chicken breasts and marinate for several hours. Cook on hot grill. I usually cook 2 minutes, rotate a quarter turn, flip and then repeat. Check to make sure chicken is no longer pink in the center. Let rest for several minutes and enjoy!
