Pumpkin Muffins with Crumble Topping





What a beautiful day to enjoy some pumpkin muffins and tea. 

I'm so grateful that Fall has arrived!  A dear reader of my blog, wrote to me and sent me this recipe to try, saying how easy and delicious it is.  I thought that was so sweet of her, and of course wanted to try it!  My tablecloth is a Big Star quilt that I made years ago, and the little cross stitch pumpkin picture was done by my neighbor.  My cross stitched pillow is one that I did years ago and is so fun to get out in the Fall.




This little rattan tray came from WalMart that is holding my pumpkin tea set. 




My Calico teacup is from Crownford China.



My dear friend Marsha from The Better Baker sent me this delightful tea.  That was so thoughtful!  It was perfect with my pumpkin muffins.




Yield: 18 muffins or two loaves of bread

Pumpkin Muffins with Crumble Topping

This recipe was sent to me by Ellen and she said that is so easy and good and she wanted me to try it.

Ingredients

  • For the muffins or bread:
  • 1 box Spice cake mix (Duncan Hines makes one)
  • 1-3 ounce box of instant vanilla pudding (mine was 3.4 ounces)
  • 1-15 ounce can of pumpkin
  • 1/2 cup melted butter (I used 1/4 cup of melted butter and 1/4 cup of walnut oil)
  • 2 eggs
  • For the crumble:
  • 1-1/4 cups flour
  • 1/4 cup sugar
  • 1/2 cup packed brown sugar
  • 1-1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup melted butter

Instructions

  1. Preheat oven to 350 degrees.
  2. Prepare you muffin pans or your loaf pans by spraying with nonstick cooking spray.
  3. For the crumble: Mix the flour, sugars, cinnamon and salt together; add the butter and mix until a crumble forms. Set aside.
  4. For the muffins or bread:
  5. Mix all the ingredients together. I did use my mixer, but it could easily be done by hand.
  6. Add the batter into the prepared pans, and then spoon the crumble on top.
  7. Bake at 350 for 1 hour for the loaves, or 20 minutes for the muffins, making sure to test with a toothpick to see if they are done.

Notes

I used my ice cream scoop for the muffins.

I had extra crumble leftover that I refrigerated and will use later.

Cissy was home from college for a few days and she stopped by.  We decided to get a selfie in front of my flowers.

  3. Ooh, I love anything pumpkin! We had company Saturday night, and I made homemade pumpkin cake with homemade cream cheese frosting for dessert. I pray all is well with you and may God bless you with a wonderful week!

  4. Wow! No doubt I'll be making these muffins. I make a similar one but I love the added crumble topping. So very sweet to have your grands stop by for a visit. I love your teacup and saucer and your adorable pumpkin tea set. I think the tea sounds like the perfect match to go with the muffins. Yay! Have a wonderful week.
