Easter Blondies




Baby it's cold outside! 

I think Mother Nature has her seasons mixed up.  It's been so cold here and the furnace is back on.  I flipped my tablecloth from last week over to the backside and am using a pretty towel for a napkin. 



This favorite bunny planter brings back memories of a dear friend who gave this to me and passed on .

My bunny teacup is from another dear friend, and it's the sweetest Easter teacup.  Trader Joes' Cocoa Berry tea is a new favorite and is perfect with the dessert, although the tea is a dessert in itself.


This set of melamine plates are so cute and came from much missed Tuesday Morning.



I  made half a recipe for this big cookie.  Just use a bowl upside down and a plate for presentation.

Easter Blondies

Easter Blondies

I changed up the recipe for these blondies by using Cadbury Mini Eggs instead of the normal chocolate chips and pecans. They add creaminess and crunch to the blondies. The blondies are very chewy in texture. You do not use an electric mixer for this recipe.

Ingredients

  • 1 stick of unsalted butter
  • 1 cup of firmly packed brown sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1 cup flour
  • 1 large egg
  • 1 cup of Cadbury Mini Eggs, crushed

Instructions

  1. Preheat oven to 350 degrees. Grease a 9" square pan, or use a tart pan with a removeable bottom.
  2. Melt the butter in a 2 qt. microwave safe bowl, covered with a paper towel. Remove the bowl from the microwave, and add the brown sugar and stir well. Add the baking powder, salt and vanilla, stirring until all is incorporated. Stir in the flour until all is well mixed.
  3. Crack the egg in a separate bowl, and beat well with a fork or whisk. Add the egg to the batter and stir with a spoon until it is well mixed. Stir in the crushed Cadbury Mini Eggs. Spread the batter into the greased pan. The batter is stiff and sticky.
  4. Bake until the top begins to get golden brown and the blondies begin to pull away form the side of the pan, about 25 minutes (baking time will vary depending on your oven and baking pan used). Do not overbake. Cool for at least 20 minutes. I popped mine out of the tart pan and let cool before cutting.

Notes

If using salted butter, omit the salt in the recipe.


In place of the Cadbury Mini Eggs, use 1/2 cup of chocolate chips and 1/2 cup of chopped pecans or walnuts.


This recipe is easily doubled to fit in a 9x13" pan.






Avery played in her last Select Club tournament and I was happy to attend.  She had to tell her coach that she's skipping the Nationals so that she can go to her senior prom,, which is the same weekend.    I know it must've been a hard decision, but she followed her heart.  It's been such fun to watch her play throughout the years and I'm so proud of her.

Bless Avery's heart for having to make such a tough decision. My daughter who lives near Mansfield...was not happy to wake up to snow on her new car today! Bummer! Hopefully it's just a tease.   13. Kitty, the blondie sounds delish. It's very cold here, too. At least the sky is clear and sun is shining here though, which is a first in almost a week. But that means it will be even colder tonight. I've covered my peonies, which have buds ready to burst!
    Avery's choice must've been hard, but it's good that she's balancing things already in life. It gets harder as one get older!

  18. I love your sweet Easter dishes, Kitty, and that planter is so precious with its sentimental memory. Tuesday Morning was such a fun store and reminds me of an old friend who loved to shop there with me. That was a bittersweet day to spend with your beautiful Avery. They grow up so fast. Too bad about the Nationals, but prom will be a life-long memory. I never got to go to my prom and it is something I always feel I missed out on.
