Easter came so quickly this year and I still want to enjoy it.

My friend, Michele, from The Nest At Finch Rest sent me this most beautiful tablecloth that has this embroidery on each corner. Isn't this perfect for Spring? Thank you so much, Michele!
My bunny teacup by Meritage goes perfectly with the tablecloth.
This spritz cookie was the first one that I ever made with my Mirro cookie press way back in the 1970's; my press eventually broke, through used error! I mentioned that once on my blog and a very dear bloggy buddy sent me one. There's nothing like the barrel of a Mirro cookie press. In the meantime, I had bought another cookie press, that I do like, but not like the vintage Mirro one, that's so dependable in cranking out the cookies. My other one is not consistent or maybe it's that I've never quite gotten used to it?
Yield: 6-7 dozen
Favorite Spritz
There's something quite wonderful with the touch of orange zest and cinnamon in this recipe.
Ingredients
- 1 cup shortening (or butter, softened)
- 1 3-oz. pkg. cream cheese, softened
- 1 cup sugar
- 1 egg yolk
- 1 t. vanilla
- 1 t. orange zest (I use the zest of one orange)
- 2 1/2 cup flour
- 1/2 t. salt
- 1/4 t. cinnamon
Instructions
- Preheat oven to 350 degrees.
- Cream shortening (or butter), cream cheese & sugar well.
- Beat in egg yolk, vanilla & orange zest
- Gradually blend in flour, salt & cinnamon which have been sifted together.
- Fill press. Form cookies on ungreased cookie sheets. Sprinkle with any colored sugar now, before baking.
- Bake for 10-12 minutes. I only bake for 10 minutes, as I like them that way!!! The original recipe said to bake for 12-15 minutes, but I think that's too long.
Notes
Cookie sheets must be very cold for the cookie dough to stick. Never press cookies onto warm or hot cookie sheets. You can even freeze your cookie sheets beforehand.

My grand daughter expressed a desire for one just like mine so I found an extra one for her on EBAY. She loves it, but so do I. I make Spritz cookies every Christmas and for every Church Bake Sale. ReplyDeleteI love those cookies - and have a cheap press- and have only made them ONCE. I always completely forget about them. Once. They turned out perfectly, too. They make such a perfect tea time cookies b/c they're not overly sweet. OK once my mini Cadbury choc eggs are gone I will make them and let you know. I am being very good lately with ignoring my sweet teeth.
Best part of post is seeing you all together. Such a wonderful family. Glad you had a joyful Easter, my dear friend. ♥
