Spicy Asian Chicken Noodle Salad


 We actually had some lower temperatures this past week!


Temperatures are "only" in the 90's now, and we received a little rain.  It's still salad nice to have some cool salads, and I hope you try it.

Spiciy Asian Chicken Noodle Salad

Spicy Asian Chicken Noodle Salad

This is one of my favorite salads!

Ingredients

  • 1/2 c. rice vinegar
  • 1/3 c. soy sauce
  • 1/3 c. vegetable oil
  • 1 T. sugar
  • 2 t. grated fresh ginger root (I used two frozen crushed ginger cubes)
  • 2 T. Asian-style chili-garlic sauce
  • 3 T. sesame oil (I used toasted sesame oil)
  • 12 ozs. vermicelli, spaghetti, or angel hair pasta, cooked & drained
  • 1 c. thinly sliced green onions
  • 2 c. diced cooked chicken
  • 1 c. sugar snap peas, lightly cooked (or use snow peas, cooked and drained)
  • 1/2 c. chopped fresh cilantro (omit if you're not a fan)
  • 1/4 c. Sesame Seeds

Instructions

  1. In a large serving bowl, whisk together the first 7 ingredients. Add pasta, green onions & sugar snap peas or snow peas; stir to coat with sauce. Add cilantro & sesame seed; toss to blend. Serve slightly warm or at room temperature..

Notes

You can buy the crushed frozen ginger cubes at Trader Joe's

 



My second child of four, who is my oldest son, had a birthday this past week, and we met near his work for a birthday lunch.  He ordered a blueberry cobbler for his free dessert that we shared.

I don't know how you have survived all those 100 degree days. We had some cooler temperatures over the weekend and teaser of fall, but the heat and humidity are cranking back up this week.   3. Glad you are getting a respite from the heat! We're expected to have temperatures
    around 100F this week which is unusual for September. Guess the hot weather is why I haven't jumped on the pumpkin spice tea wagon yet...although I have decorated for fall!

  5. Happy Birthday to Tim! "Only" in the 90s. Wow. We have 3 days of that and I'm staying inside. Bless your Texas heart, Kitty. TX has just been stupid hot.this summer.
