Sunflower Seed Pie



Have you ever had a sunflower seed pie??  I was looking for a dessert to use featuring my pretty sunflower plates, and this pie was born!  My sunflower tray was a FB Marketplace purchase and my teakettle was painted by my son, Mike, several years ago,  to imitate a MacKenzie-Childs one.



In the somewhat cool of the morning, I set a table with my pretty plate, framed note card from Jenna of The Painted Apron, and sipping on some Mango Bay iced tea.  The yellow birdie was my mom's, and the towel was from Debbie at Mountain Breaths.


Jenna at The Painted Apron has a shop in Society 6, and she painted these pretty coasters.


Ella made the 7th grade A Volleyball Team! She's very excited!


I went to Cissy's first pep rally, but didn't go to the varsity football game that evening because the temperature was still over 100 degrees.  Can you imagine cheering and playing??

Sunflower Seed Pie

Sunflower Seed Pie

I used my favorite pecan pie recipe, minus the salt, and substituted sunflower seeds for pecans. This would be a great alternative for people that have nut allergies.

Ingredients

  • 9-inch unbaked pie crust
  • 1 cup light corn syrup
  • 1 cup firmly packed brown sugar
  • 3 eggs, slightly beaten
  • 1/3 cup butter, melted
  • 1 teaspoon vanilla
  • 1 heaping cup roasted and salted sunflower seed kernels

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large bowl, combine corn syrup, brown sugar, eggs, butter, and vanilla; mix well.
  3. Put the sunflower seed kernels into the bottom of the unbaked pie crust. Pour the filling on top of the kernels. In about 1-2 minutes, the kernels rise to the top.
  4. Bake for 45-50 minutes (or a little longer) until the filling is set, and not too jiggly. **Midway, check to make sure the crust or pie is not getting too brown. If it is, cover with foil. Cool and refrigerate.

  1. What an adorable table setting and family update. CIssy is a beautiful young woman now, and Ella reminds me of Cissy at that age! And that pie sounds yummy! I love sunflower seeds, how unusual to have a pie!

  3. Oh I'm sure I would love this pie...what a great alternative idea for allergies. That pie would taste extra good sitting at your lovely table scape! I do hope your temps drop soon. Loved the pics of your pretty girls too. You are such a busy & blessed Nana! XO

  5. It finally cooled off here - I sure hope yours does too. Perhaps you should move back here, Kitty! : - ) I cannot even imagine playing in a football gear with that kind of heat. It's so unhealthy. We cheer practiced in high heat during two-a-days back then, but never in 100 degree nights. Just wow. My sister is her middle school cheer coach and the officials cancelled the game last thurs b/c it was too hot. Wish yours would too, to protect everyone. Hugs. BTW that pie looks amazing. Never heard of it before - but pecan pie is one of my all time favs.

  6. Congrats to both of the girls!!! This pie is sooooooo unique! I am thinking of trying it around Thanksgiving, I think the sunflower seeds would be waaay healthier than pecans. Thank you for sharing!

  9. Good morning Kitty! What an adorable pie and fun idea to sub sunflower seeds for pecans! What great photos of your grand girls! I can't imagine playing ball and cheering in that kind of heat. It's all I can do in this humidity to walk the dogs in the morning. :) Jenna's notecard is so pretty framed and I love the tea towel from Debbie too. Stay cool if you can. ♥

  17. This reminded me of the ingredients for a pecan pie. What a clever thing to use sunflower seeds! Dear Zach bought me a pecan pie for my birthday. I eat very little sugar, so it was such a huge treat! I am relishing every bite. LOL! Sending love and hugs your way today, sweet friend.
